This was good, never had Venison Hamburger but know the tendency I heard it has to dry out from childhood. I did a few thing differently. I did not make the mayo. Rather than use green onion, i didn't have any on hand, I re-hydrated some dried onions, had no yogurt, used s. cream, do not use Jal. so I put in flake red peppers, a few pinches, like you sprinkle on pizza. I also added 2 eggs, a few T of mayo and about 3 T of Heavy whipping cream I had on hand from x-mas candy making to help with the fat for cooking etc. Added a little seasoning salt, a little McCormick grill mates Hamburger AND Garlic and Herb Seasonings, 2t paprika, 1t Garlic powder, 2 dashes Cayenne Pepper. The mixture was VERY wet and had to sort of be flattened/molded in my palm and placed in the pan which I had sprayed with olive oil pan spray. I cooked in the pan since almost no "fat" was involved, on Elec stove, burner on 6 and before flipping I sprinkled with some Worcestershire sauce. All was yummy served with some very hard surfaced rolls heated in the oven, Seasoned F. fries, added mayo, catsup, mustard dill pickles and fresh spinach in place of lettuce. Hubby tried, never had Venison hamburger before, LOVED this, said best burger he's ever had, did have to scrape build up on bottom of pan several times, just a note to preparer.
