Valentine's Day Cheesecake
About this Cook
I am a mother of two. I have a 2 yr old son and mydaughter was born Dec 2008. I love to bake for people and to give them something sweet, indulgent and pretty. Sometimes I wish brownies and molten chocolate cakes really could make everyones problems go away... I love to embrace the southern hospitality I was raised with (in Mississippi) and let food warm peoples hearts and make them feel at home. I'm not a top chef but I loovvee to cook and if I can brighten anyone's day with something warm and gooey, I think I'd feel pretty accomplished :)
My favorite things to cook
I love LOVE to cook desserts, esp. cheesecakes and cakes. I love decorating cakes and making truffles nice and pretty.
My cooking triumphs
Homemade chicken noodle soup, white chocolate raspberry cheesecake, truffles, biscotti and strawberry cake.
My cooking tragedies
Well... if you must know.. the first time I made homemade pizza i wanted a thick crust and so i followed the recipe and added the sauce and cheese to my homemade dough... and ended up with a black cheese topping and gooey crusts! I know now to cook the pizza in a HOT oven, bake the crusts 10min and then add the topping, and using a pizza stone really makes it great!

100 Percent Whole Wheat Bread
I just made this using fresh milled flour in my nutrimill. I used hard white winter wheat berries. I didn't have any of the added grains but it was still delicious! To cut out fat I added 2 TBS of non-gmo lecithin granules instead of coconut oil. I also had to increase the water by 1 cup. I used half my dough for rolls and the other half for cinnamon rolls, a healthier version that is still delicious!

Carrot Cake III
Good taste, but it is more like bread than cake. Mine also sunk in in the middle, and I made sure not to overmix or undermix. It seems to dense to be a cake.

Plain Cake Doughnuts
These need to be rolled a little thicker and I also found them to be slightly salty. But they do taste very good, even 2 days old.. unlike yeast donuts that tend to taste very dry.
