Coconut Cream Pie IV

I 'almost' followed this recipe exactly....only change I made was using 4 eggs instead of 3 to allow for plenty of merangue. I took the advice of other commenters and made sure to give it more than needed cooking/stirring time. It turned out wonderfully and tastes excellent. My sole complaint is that I used/like a deep dish pie and used that pan.....and the amount of filling was really skimpy for the larger pan size. Either increase everything by half or use a regular pie pan, not a deep dish!

Sugar Cream Pie I

Fabulous! Rarely have I gotten such rave reviews over anything I have taken to a dinner. I did use half whipping cream/half of half & half as I was low on the latter. I can not praise this enough. The texture is to die for. My best friend said it was like eating homemade ice cream baken in a pie!

Three Cheese Manicotti

Probably my error but it was much too dry for my tastes. I did, however, split the recipe and bake in two smaller pans as half was for a friend. Her portion was better she said, mine had much too little sauce. In future whether I split it or not I will likely add about one half more the sauce as is called for. I like a 'juicier' manicotti.

Baked Mac and Cheese for One

Excellent flavor and quantity. As a widow living alone I hesitate to cook many things owing to the amount of leftovers I will be faced with. This made just enough for dinner and a hearty lunch serving the next day. Terrific!

Spinach-Stuffed Bread

While my guests, and I, really enjoyed the flavor of this very much it was a bit 'soggy' after cooling. I had left the spinach in the collander for over an hour anticipating the moisture might be problimatic....but even with all the draining and hearty squeezing after that it still seemed too 'watery' for the bread to support. Anyone else have this problem and how did you get around it Overall however, very tasty indeed!

BLT Pasta Salad

I absolutely love this recipe! I used fresh grape and cherry tomatoes from the garden, plenty of onion aned a few diced fresh peppers in the mix. Not a big fan of ranch myself so I used it about half and half with mayo. Oh, the next time I made it I also threw in a handful of shredded mild cheddar. This is a real keeper in my house!

Dried Beef Cheese Spread

i added a bit more onion, some finely minced peppers, worcestshire sauce and a drop or two of liquid smoke. Fabulous! It's a good recipe as it stands but can be tweaked in so many ways to suit your tastes.

Homemade Crispy Seasoned French Fries

I did something really wrong here! Believe it was my batter. It was quite 'liquid' and instead of coating just puddled around them. I baked them as suggested and they took over an hour at 350 and eveything stuck in the process. No real flavor at all. Again, I'll accept the error was mine but what I ended up with was frankly just awful. :(

I found these to be too dry and 'cake like' for my cookie tastes. The flavor was rather blah and surely needed something to liven them up a bit. Perhaps with a higher cooking temp they would supply the necessary crunchy edges and chewy center. I followed the recipe exactly even down to the baking time and was disappointed with my results. There are much better cookie recipes out there!

Creamy Sausage Dip

The absolute hit of the party! Everyone requested this recipe. Owing to friends who do not like 'spicy' I substituted mild sausage, would love to taste it with the hotter variety. This is a keeper and a winner. I served on toasted thinly sliced French bread and it was fabulous.

Chicago Dip

This was a great hit at the Super Bowl party. Even my neighbor who swears he abhors spinach in anything ate it up. I did add a dash more pepper and a pinch of chili powder to give it a bit more zing, after the fact, but even as directed exactly it was so good.
