Jalapeno Popper Spread

This dish was really very tasty. I made it for a gathering and everyone devoured it. Per other reviews, I used 4 fresh jalapenos. I also used 1/2 cup of panko breadcrumbs along with the Parmesan cheese and baked at 375 degrees for 20 mins. Served with baguette slices. YUM.....

Shrimp Scampi Bake

I tried this recipe last night for dinner and my dh and I loved it! This was so easy to make and the shrimp was cooked perfectly after 12 minutes. I halfed the recipe because I only had one pound of shrimp, but next time I will make the recipe as stated even with only one pound of shrimp. I used white wine in place of the lemon juice. Served over vermecelli. Delicious......

Mexican Chicken Kiev

YUMMO! This dish was fantastic. I made it for dinner last night and what a terrific flavor. I only used 6 thin sliced chicken breasts, 1 can of chopped green chiles, I used Pepper Jack cheese for an extra bite and used Panko Italian bread crumbs. I did not use any salt and used shredded Parmesan cheese. Will definitely make again..

Blue Cheese, Bacon and Chive Stuffed Pork Chops

These were fabulous! I used 1 1/2 inch thick Pork Loin chops so I baked in the oven for 1 hour @ 350 degrees. After reading reviews, I decided to use feta cheese. I cooked up 4 slices of Applewood thick smoked bacon and crumbled. I used a tablespoon of sour cream and a tablespoon of chive and onion cream cheese to the feta. I browned the chops in the bacon grease for one minute and then stuffed the chops and placed in the preheated oven. Yummy.....

Shrimp and Feta Cheese Pasta

Very tasty dish. I read the reviews prior to making this meal and so I made the following changes. I used 1 cup wine and 1 can diced tomatoes with basil, oregano and garlic. I did not add any dried oregano or basil. I used a 4 ounce container of crumbled garlic and herb feta cheese. I enjoyed the lightness of this meal and I will definitely make it again.

Simple Ranchy Breaded Fish Fillets

I tried this dish the other night. This dish was very salty. I think the concept is good, it just needs tweeking. I had 6 flounder fillets and I did not have enough coating to cover them all. Next time I will use 1 cup Italian Panko bread crumbs and 1/2 package of dressing mix. I also used 1 egg to coat the fish in. Baked in oven at 375 degrees for 25 mins. I may add Parmesan cheese to add to the flavor when I make again.

Chicken Valdostano

My husband and I really enjoyed this recipe. It has a great flavor and makes an excellent dish to serve to company. I didn't make any changes except to use 5 thin sliced chicken breasts, one small package of fresh mushrooms and 1 Tablespoon of dried parsley because that is what I had on hand. Next time I would like to thicken the sauce more so I will add some corn starch. Great recipe.

Fried Cabbage II

Oh YUM! If I could give it more stars I would. My husband devoured this dish. I did use 5 slices of applewood thick bacon and one (16 ounce) bag of Old Fashion Shredded Cole Slaw mix. Oh my - everyone I have had try this dish wants the recipe. Thanks for sharing this wonderful side dish.

Breaded Ranch Chicken

Per other reviewers, I made a couple of changes, but I wished I had made more. I used flounder and dipped in egg prior to breading. I also baked at 375 for 25 mins. The fish tasted so salty, I could hardly eat it and there was not enough breading to do the 6 pieces of fish I had. I did not rate it lower because I think it has potential, with some changes. Also, I do not use salt with my food, so this might have made a difference. Next time I will add 3/4 cup of Parmesan cheese to the mixture or use 1 cup of Italian Panko bread crumbs to 1/2 packet of Ranch dressing mix.

Healing Cabbage Soup

This is truly a comfort food. This is a great soup for a snowy, cold night. Will definitely make again. The changes I made were: I used a whole onion, I used chicken stock, did not use salt, used a 16 oz bag of Old Fashion Cole Slaw Mix, added 2 can of diced tomatoes with basil, garlic and oregano, added a pinch of sugar and added a couple of diced carrots. Served it with some crusty bread. YUM....

Sausage Stuffed Jalapenos

YUMMO!! These Jalapenos were awesome. Everyone devoured them in no time. I brought some Ranch dressing to serve with them, but it was not needed. Only change I made was to use Jimmy Dean Mild sausage. I added a few drops of Habenaro Chili sauce to half of them for a little more kick. Next time I think I will try the Jimmy Dean HOT sausage. Thanks for the great recipe!

Basil Pesto Bread Rounds

Absolutely delicious. Made this recipe for a birthday party last night and I got rave reviews from everyone. I followed the recipe to a "T" with the exception of baking it in a 425 degree oven for 8 mins. I did not have to broil them, as they were golden brown - YUM....

Sweet Mustard Chicken Bake

After reading other reviews, I made the following changes. I used 1/4 cup honey, used Honey Dijon mustard and use 1/4 cup melted butter. I also sprinkled Italian Panko breadcrums over the chicken. This was a very flavorful dish, which I will make again.

Ultimate Twice Baked Potatoes

I made these potatoes for dinner the other night and my husband and I really enjoyed them. I used Hormel Real Bacon Pieces instead of cooking bacon. I also used onion flakes because I did not have any green onions. I did add some chopped chives. I plan to freeze the leftovers for another meal. They freeze well. Will definitely make again.

Creamy Pesto Shrimp

This dish was fabulous! I made it for dinner last night and my husbard and I devoured it. We are both fans of pesto, so this was a no brainer. The only change I made was to use light cream instead of heavy cream cause it was what I had on hand. Will make again.

Italian Sausage Soup

This soup had such a great aroma to it. I changed the recipe a little cause I had to use what I had on hand. I think it came out fantastic. Especially if you are a garlic lover. Here are my changes: I used a package of precooked garlic chicken sausage. I just removed the skin and cut into 1/4 inch pieces. I used chicken broth instead of beef and I used two cans Italian-style stewed tomatoes. I did not add the salt as I think the chicken broth has plenty in it. I added a diced onion, basil and oregano. Serve it with crusty bread and grated parmesan cheese. YUM!

Rich and Creamy Tomato Basil Soup

Absolutely fabulous. I made this soup last week and I am just getting around to rating it. It was so creamy and tasty. This was my first attempt at homemade Tomato Soup and I think I picked a winner. I will be hard pressed to eat any other type Tomato Soup from now on. Will definitely make again.

Boilermaker Tailgate Chili

Pesto Pita Appetizers

I made these for New Year's Eve and they were a hit. My family loves pesto so when I saw this recipe, I just had to try it. I did add finely sliced Roma tomatoes to place onto of the pesto then added the parmesan cheese. Will definitely be making these again.
