Scallops with White Wine Sauce II

OMG! This was delicious. I wanted to make a surf and turf dinner so I decided to try this recipe and I was not disappointed. My husband loved it also. I followed the recipe to a "T". Next time I may add some additional ingredients, but it is fantastic as is.

Zucchini Stuffed Chicken

Made this for dinner last night and I must say my dh and I both loved it. I was a little skeptical because zucchini can be tasteless without a mixture of other ingredients, but this was awesome. I followed the recipe with the exception of sprinkling salt, pepper and garlic powder over the chicken and brushing a little honey over the top of the chicken skin. Will make again.

Delish! Made this yesterday and was very pleased with the results. The changes I made were: Used 5 cups tomato sauce cause I had a half can leftover from another meal. Used frozen green beans and I yellow squash for one of the zucchinis. I added a can of diced tomatoes per other reviewers. Used dried spices because that is what I had on hand. Added a handful of ditalini pasta to the pot last 10 mins of cooking and added the can of kidney beans at the end. I also added a package of fully cooked "al fresco" spicy jalapeno chicken sausage, skin removed cut into 1/2 inch slices. Also added a pinch of sugar because I like to do that when I cook with tomato base sauces. This is a very hearty dish.

Champagne Shrimp and Pasta

Let me first start by saying this recipe is fabulous. My husband and I loved the flavor of this dish. I doubled the champagne and heavy cream which was my first mistake. I was running late and did not read the reviews of how you need to boil the champagne longer than the recipe states so my sauce was too thin for our liking, but I cannot lower the rating because of my mistake. I will make again, but will boil the champagne longer to make the sauce thicker. Great recipe.

Maria's Stuffed Chicken Breasts

OMG! This was soooo good. My husband and I totally enjoyed this dish. The only change I made was to use fresh steamed spinach which I had on hand. As a side dish, I cooked some thin spaghetti and added the additional sauce on top. This is restaurant quality. Marie you outdid yourself. Thanks for this great recipe. I will be passing it along to others.

Mushroom, Leek, Chicken Sausage and Tortellini Soup

This soup is very tasty but I only used 1 teaspoon of Tabasco sauce and I thought it had a punch to it. Cannot believe people used so much in this dish. Anyway, I used only 1 leek, spinach and feta chicken sausage and spinach and cheese tortellini. Added a handful of shoestring carrots to give it some color. Very easy to make.

Pork Chops Stuffed with Smoked Gouda and Bacon

I am giving this 5 stars because my husband really liked them. I was a little disappointed. I will try again but next time I think I will slice the Gouda. I shredded it and I think it caused the cheese to dry out too much. My only change was to use dried parsley (its what I had on hand) and sauteed the chops in the bacon grease for flavor. Covered and baked in 350 degree oven for 15 mins and uncovered last 15 mins per other reviews. Will try again because my husband liked this dish so much.

Easy White Chili

I made this chili yesterday and I cut the recipe in half because it makes alot. The only change I made to this recipe was to add a can of Mexicorn and some dried cilantro. Nice change to the regular chili I make.

Creamy Chicken and Wild Rice Soup

I made this soup yesterday and I must say it was very good. I was looking for a soup that used wild rice and when I saw this recipe, I was determined to try it. Per other reviews I made the following changes: Used all chicken broth, used 5 T. butter, 1/2 cup flour and used milk. I first sauteed garlic, onion, carrots and mushrooms and added oregano and basil. I used Uncle Ben's Long Grain Wild Rice. YUM....

Chicken Fajita Melts

Made this dish for a party last night and it was a big hit. This is an easy dish to prepare. I made the chicken mixture earlier in the day, when ready to eat, I microwaved the chicken mixture for a couple of minutes and placed on bread and baked. The changes I made were: I used a store bought rotisserie chicken, a whole onion sliced, a whole red pepper sliced, a package of fajita seasoning mix, and 3/4 cup of tomato juice. I did not measure the amount of cheese I used either. Will be making again.

High Temperature Eye-of-Round Roast

I thought this roast was delicious, although I wish it would have been more tender. I took a knife and pierced the meat so I could place some slivers of garlic into the meat. The garlic premeated throughout the roast. It came out medium which is how my husband likes it. I prefer medium rare. Will make again.

Chicken Noodle Casserole I

First I will start off saying that if I had not added additional ingredients this dish would have been very bland. I am giving it five stars with the additions I made. I added a bag of frozen mixed veggies, sauteed mushrooms, garlic and onion and added, and added oregano and basil to the sauce. This dish came out very tasty.

Slow Cooker Chicken Taco Soup

Made this for a dinner party last night and everyone really enjoyed the flavor of this dish. It is so easy to make and it has alot of flavor. I did use Bill Echols Taco Seasoning recipe per other peoples reviews. I added some cilantro and cumin. Will make again.

Mexican Shrimp Cocktail

I made this dish for a Mexican theme dinner party last night. everyone really enjoyed it but I think it needed a little more of a kick, but that was my fault because I had some guests who do not like spicy food so I decreased the hot sauce to 1/2 teaspoon. My changes were: added some green pepper, added 1/2 cuke, chopped celery and a Roma tomato. I think next time I will try the Spicy V8 juice to see if it has a little more flavor.

Salsa Chicken Rice Casserole

I made this for a Mexican theme dinner last night and it was a big hit. Everyone wanted the recipe. Per other reviews, these are my changes: I used a Rotisserie chicken and chopped, to save a step. Only used 2 cups Cheddar cheese, sauteed the onion and added peppers, used half salsa and one can of Rotel tomatoes with green chilies. I also added a can of southwestern style corn. Layered rice with onions and peppers, corn, chicken, sauce and then cheese. Covered with aluminum foil for first 30 mins and uncovered for 10 mins. YUM.....

Chicken Cordon Bleu II

All I can say is WOW! This was sooo good. My husband especially liked the sauce and he doesn't usually care for it. After reading the reviews, I did the following: I used 3T butter amd 3T olive oil. Put the ham and swiss on the chicken and rolled up, coated in egg wash and rolled in Panko bread crumbs. Fried lightly for 3 mins. each side and placed in a baking dish. With the oven at 350, I placed the chicken in the oven to bake for 25 mins. While the chicken was baking, I mixed the wine, chicken bouillon, heavy cream/cornstarch in the pan with some dried basil (that's all I had on hand), and sauteed until thick, appx. 10 mins. Will definitely make this again many times.

Italian Breaded Pork Chops

My husband and I thought these were very good. What a nice flavor the chops had and they were very juicy. Per other reviews I did the following: 2 eggs, 2 T. lt cream (didn't have any milk) 1 cup Italian Panko breadcrumbs, 1 cup grated Parmesan/Romano cheese, 1 T. parsley. I had 6 chops, sprinkles with pepper, mixed the other ingredients in a zip lock bag and added 3 chops at a time to coat. Added oil to the pan and sprinkled garlic powder and onion flakes into the skillet. Added the chops and fried on each side for about 3 mins. Placed in a pan and baked for 30 mins. Makes a great meal.
