Tortellini Bacon Broccoli Salad

I just have to say I took this to a birthday party yesterday and everyone raved about this salad. I was asked several times to provide the recipe. This is a great summer salad and it so easy to make. I cut the bacon into 1/2 inch strips and cooked the day before so the real mess was already taken care of. I will definitely be making this again. YUM....

Airport Bob's Green Beans

This side dish is beyond words! I made this dish for dinner last night and both hubby and I devoured it. I did not make any changes to it - it is just a simple recipe full of flavor. Will definitely be making this again. Can't wait to share with family and friends....

Bacon Wrapped Chicken

I made this recipe for dinner last night and it was a big hit. The few changes I made were: I used chive and onion cream cheese for the filling. Partially cooked the bacon cause it was extra thick and I added garlic powder, onion flakes and basil to the sauce to give it a little extra flavor. Will definitely make again.

Asparagus Parmesan

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Classic Texas Caviar

I really wanted to give this recipe 4 1/2 stars but I can't so I settled for 4. I took this dish to a get together and I had mixed reviews. I felt it was lacking something for taste, not sure what,but it could use something to sweeten it a little or maybe a little hot sauce to give it a kick. I did use black eyed peas and black beans, Rotel tomatoes, added a small can of corn, red onion, a little garlic powder and some diced avocado prior to serving.

Pasta with Pesto and Scallops

YUMMY! This was a very flavorful dish which my husband and I truly enjoyed. I made the recipe as stated with the exception of using a red pepper and using a 7 ounce container of pesto. We are pesto fans in this house. Will definitely make again.

Roasted Red Pepper Chicken

Made this dish for dinner last night and we really enjoyed the flavors. I used thin sliced chicken breasts and rolled the roasted red peppers and cheese inside the breasts. I used pepper jack cheese for a kick. I did bake in the oven at 350 degrees for 20 mins, poured the sauce over the chicken and cooked for another 10-15 mins. I used a 16 ounce container of sour cream, chopped some of the roasted red peppers and added to sour cream, added a dash of cayanne powder, garlic salt and chili powder, along with some feta cheese. I also used Italian Panko bread crumbs. This was easy to make and I will make this again.

Beaumont Ranch Potato Salad

I took this potato salad to a cookout yesterday and it was a big hit with everyone. Loved the blending of the various ingredients. The only thing I did not use were the dill pickles because I was afraid it would make the salad too tart. I do have one question, if anyone out there can answer for me. I do not understand why the potatoes are cooked whole and chopped after. I found this step to be very cumbersome. When I was trying to chop all the potatoes, it mushed some of the others. I would think it would be better to chopped the potatoes before cooking which would save time and make the dish easier to prepare. Please let me know if I am missing something here. Appreciate any comments. Awesome recipe and I will definitely make this one again. UPDATE: I made this salad again for a birthday party. I cut the potatoes into bite size pieces and cooked for 10 mins. once the water came to a boil and then proceeded with the recipe. So much easier to do it this way. Also, I had rave reviews and some even said this was the best potato salad they had ever eaten. Thanks for making me look like a gourmet chef!

Mushroom Rice Pilaf

This rice dish was excellent. It had alot of flavor and everyone commented on it. After reading other reviews, I made the following changes: First off, I made a large enough amount to feed 8 guests. I used one whole red pepper, diced. One chopped onion, 4 T. butter, one box of fresh mushrooms, 2 1/2 cups chicken broth, 1 cup rice, one teaspoon or so of basil, thyme and oregano, minced garlic and a teaspoon plus of brown sugar. I cooked all the veggies in butter, removed to a plate while I cooked the rice in the chicken broth per package directions, and then returned the veggies to the pan and let sit for 5 mins. Delish!

Panzanella Salad

I made this salad for a dinner party last night and everyone raved about it. What a nice flavor this salad had. The changes I made per other reviews were: I used ciabatti rolls, used cherry tomatoes cut in half, used black olives instead of green, and used garlic infused canola oil from Pampered Chef for the bread pieces. No leftovers. Will be making again.

Spinach and Feta Pita Bake

OMG! This recipe was a BIG hit at my dinner party last night. Everyone wanted the recipe. I made this as an appertiser and sliced the pita breads like I would a pizza. The only change I made to this recipe was to use basil pesto because I could not find the sun-dried tomato pesto. Will definitely be make this again.

Italian Sausage Soup with Tortellini

I made this soup awhile back and forgot I had not rated it yet. This was really very tasty. The only changes I made to this recipe were - I used canned tomatoes vs. whole tomatoes and I used green beans instead of zucchini because some kids were eating this soup and they do not like zucchini. Will make again.....

Coquilles St. Jacques

I made this recipe for dinner last night and it was a big hit. Loved the flavor and it is restaurant quality. I used Panko bread crumbs, used only 1/2 cup mayo and 1/2 cup heavy cream per other reviews, added some minced garlic and used Swiss cheese because I did not have enough Gruyere cheese on hand. Next time I will make this dish with the Gruyere cheese though because that is a favorite of mine. Thanks for the recipe.

Oh gosh this was really yummy. I made this as written with the exception of using a green pepper in place of the orange (didn't have on hand) and used a Mexican blend cheese instead of cheddar. Will definitely be making this dish again. My husband went for seconds.....

Zucchini Saute

Both my husband and myself really enjoyed this veggie dish. I will definitely be making this again. My only changes were: I added 1 T. butter to the oil, I used a sweet onion because I did not have a red onion on hand, I had to use canned mushrooms, didn't have any fresh (shame on me), I used basil instead of italian seasoning and added one teaspoon sugar. When it was doing cooking, I sprinkled it with parmesan cheese. YUM!!!

Brown Sugar Meatloaf

This meatloaf was delicious. My husband loved it and asked for it again in the near future. This was easy to prepare and I cooked it for 1 hr 15 mins. Changes I made per other reviews are: 1/4 cup brown sugar, 1/2 cup milk, 1 T. Worcestershire sauce and minced garlic. I also used Panko Italian breadcrumbs. I also added the brown sugar/ketsup mixture on top of the loaf. Next time, I will double the sauce to use some when serving the pieces of meat. YUM.....

Oven Roasted Red Potatoes and Asparagus

These potatoes and veggies were very tasty. Saves on the dishes. The changes I made after reading other reviews were: Used only 1 teaspoon of rosemary and one teaspoon thyme. I baked the potatoes, covered for 30 mins., added asparagus covered 5 mins and uncovered for the last 5 mins. I also added a chopped onion with the potatoes for added flavor. Nice change.
