Parmesan Chicken

This dish was absolutely fabulous! I used Panko breadcrumbs, added garlic powder and didn't measure the dried basil. I spread some pasta sauce on the bottom of a baking dish, coated the chicken as instructed, place on pasta sauce and baked in oven at 375 degrees for 30 mins. I sprinkled mozzarella cheese over the chicken and placed back in the oven until the cheese melted. I served this with thin spaghetti and warm pasta sauce. Will be making this dish again for sure.

Twice-Baked Ranch Potatoes

Made these potatoes for a dinner party the other night. They were good for a change to the regular twice baked potatoes I make. I did bake mine in the oven, prepared ahead in the morning and finished baking in the oven just prior to eating dinner. I used 8 potatoes because of the number of guests, I used chive/onion cream cheese (doubled), 4 T. milk plus, did not use the added mashed potatoes, I agree with other reviews that this step was not necessary and added some cheese to the potatoes mixture prior to topping with the remaining cheese. I did only use 1 package of the ranch salad dressing mix, because I was afraid of making the potatoes too salty. I may try making this recipe as stated next time.

Cindy's Awesome Clam Chowder

I would give this ten stars if I could. This was absolutely amazing. I served this at a dinner party the other night and everyone raved and wanted the recipe. The only changes I made were: I used only four pieces of bacon, did not use salt or pepper, and used 4 cans of chopped clams. I had only light cream so I used that, but it is very similar to half and half. I used the juice from the canned clams to cook the potatoes in, adding a little water to just cover the potatoes. The soup turned out nice and thick and the flavor, well, I can't find the words right now. Thanks for this wonderful chowder recipe.

Spinach and Strawberry Salad

I made this salad for a dinner party the other night and it was very tasty. This makes alot and as others stated, it does begin to wilt once you add the dressing, so next time I make this, I will use only one bag of baby spinach. I also added some fine sliced red onion, gorgonzola cheese, and honey roasted walnut pieces. I also used olive oil and only 1/4 cup sugar. Makes a nice presentation. I also think this would be good to eliminate the spinach and use romaine lettuce instead.

Hot Raspberry Spread

This spread was delicious! I served it as an appetizer for a dinner party I had and everyone devoured it. It has a nice sweet and tangy taste. I did not change a thing and I will definitely make again. Thanks for the recipe.

Stuffed Pork Chops with Gorgonzola and Apple

I am on the fence with this recipe. I cannot put my finger on it, but something was missing. I am not sure if it was the tartness of the Granny Smith apple or something else. The only change I made was to use some Season All Salt on the outside of the chops and only cooked for appx. 45 mins. The pork chops were juicy and all, but I do not think I will make again.

Slow-Cooker Pepper Steak

One word - Delish! Served this on bulky sub rolls for dinner last night with provolone cheese. The flavor was awesome and the meat was so tender. Only changes I made were: I used a whole chopped onion, used a red, green and yellow pepper, used a can of chopped tomatoes and omitted the salt. I did not brown the meat, just placed in the slow cooker turned on HI for the first hour, then turned to LOW for the remaining cooking time. I also did not put the peppers in until one hour prior to serving. Will defnitely make this again.

Pork Roast with Tangy Sauce

This roast was awesome! The flavor of the sauce was so tasty. The ingredients sounded interesting so I thought I would try it. Per other reviewers, I also used 3/4 cup of ketchup. My roast was only 2 1/2 lbs, so I used a meat thermometer to tell when it was done. It reached around 160 degrees and I took it out of the oven and let it sit for 15 mins. Will definitely make again.

Stuffed Tomato Basil Chicken

My Dh and I thought this was very tasty. The few changes I made per other reviewers were: I cooked in oven at 350 degrees for appx 40 mins., used a whole 12 ounce bottle of herb and garlic marinade because I had already dumped it into the zip lock bag before I read the amount, but I also had 6 chicken breasts, so it worked out fine. I also marinated for appx 4 hours. I used prosciutto instead of bacon, which was awesome, and used Roma tomatoes. Next time, I will use a thicker slice of provolone, more tomato and more fresh basil.

Asparagus with Junk

I thought this dish was very tasty. I tried the roasted version as posted by another reviewer. I lightly oiled the asparagus and added salt and pepper. Put into a preheated 425 degree oven for 8 mins, the decreased the temp to 375 degrees and added other ingredients, returned to oven and baked another 15 mins. My only negative comment is that 1 cup of mayo is way too much. I decreased it to 1/4 cup and I think that was plenty.

Pasta with Scallops, Zucchini, and Tomatoes

This dish was delish! I think the fresh grated Parmesan cheese gave it the finishing touch! The changes I did: mixed fresh basil with dried and used less than called for because I ran out of the fresh. Per other reviews, I added 1/4 cup white wine and 1/2 t. Old Bay. I added, at the end, 1/4 lb cooked shrimp. Also use much more of the Parmesan cheese than stated. This is a keeper. Thanks for the recipe.

Honey Roasted Red Potatoes

Delish! This was an awesome side dish. Loved the sweetness of the honey. I used basil instead of rosemary and that is the only change I made. Next time I will double the sauce. Loved it!

Tangy Apple Chicken Loaf

This dish was awesome! My DH and I loved it! The only change I made was to use 2 lbs of ground chicken cause that is what I had on hand and marjoram instead of sage. Next time I will double the glaze per my DHs request. What a great recipe! Will be making this for a dinner party in the near future.

Slow Cooker Beef Stew I

This was very tasty but it needed to be a little thicker. Next time I will use more cornstarch to remedy that problem. I used season all salt, used 2 teaspoons of Worcestershire sauce, added 1/2 cup red wine per other reviewers, frozen peas and added a dash of Kitchen Bouquet. Cooked on HI for 4 hours and turned to LOW until ready to eat. Great meal for a cold rainy or wintry day.

Rolled Flank Steak

Oh Gosh! This was fantastic. I only had a 1 1/2 lb flank steak that I had the butcher butterfly for me, which was a wonderful idea. I can't imagine doing it myself. I followed the recipe except I put the bacon in the micro for 1 1/2 mins per other reviewers and used roasted red pepper instead of the red bell pepper. It was awesome and I can't wait to make this for a dinner party I am having in the near future. Awesome!

Seafood Fettuccine

This is a good recipe and I did make it as stated with the exception of using some dried basil for a little flavor. I think next time I make it, I will use more garlic, the dish was a little bland for my taste. A little tweeking and it will be delicious.

Chicken Asparagus Roll-Ups

I thought the concept for this recipe sounded delicious, especially since I love asparagus. I used appx. 2 T. of lemon juice, next time I think I will use 1 1/2 T. I thought the lemon was strong and overpowered the dish, but overall my husband and I really enjoyed the meal.

Slider-Style Mini Burgers

OMG! These are absolutely fabulous. I made these for a birthday party yesterday and they were a BIG hit with everyone. I followed the recipe to a "T" with the exception of cooking in the oven for only 15 mins. just to warm them. Will be definitely making these again and again.

Seven Layer Taco Dip

This dip was very tasty but I think the amounts are a little off. I used only half of the cream cheese and half of the sour cream, otherwise you hide the taste of the refried beans. Also, I mixed the seasoning mix with the sour cream, cream cheese. I drained the salsa because I was afraid it would get to soggy. I also added the shredded lettuce just before serving. Will be making this dish again.

Zesty Slow Cooker Chicken Barbecue

I brought this dish to a 4th of July party and it was a smash hit! Everyone loved it and wanted the recipe. I served different types of sliced cheese to put into the sandwich with the chicken. Very flavorful. I did not find it runny at all, in fact, it was perfect. I did cook on low for 3 hrs and shredded the chicken and let simmer another hour. I also used fresh chicken breasts. Awesome recipe.
