Green Eggs and Ham Quiche

I wasn't sure about this at first, but the taste only gets better as it sits! I had only a tiny bit of spinach, so I added some cooked chopped broccoli. I also added some garlic to the onions, which I cooked in a little butter, before mixing with the broccoli/spinach. I mixed the baking mix, milk and eggs separately and then stirred everything together, so as to get a more chunky texture. Added the ham and cheese on top of the 9 x 9 glass dish. I cooked it 35 mins @ 325 and an additional 15 mins @ 350 because it was totally jiggly!

Snowball Cake

I made this last week and covered the top with shaved white chocolate instead of coconut and it was a HIT at my dinner party! It took about 1h15m to cook.

Corned Beef and Cabbage

This recipe is fantastic! I added 1 bottle of beer to the 3 cups of water, and still added a bit more water to cover the corned beef. As others did, I put the beef at the bottom of the crock pot and added the cabbage only in the last 3 hours of cooking. Everything came out perfect! The potatoes and carrots were NOT over-cooked and the cabbage was just right. My boyfriend and I raved about the flavor and texture of the meat and veggies through the whole meal... not something we do every day!!! AWESOME and super simple recipe. I will make this again for sure!

Apple-Cran-Cherry Oatmeal Cookies

Awesome! I couldn't find any dried cranberries, so I used copped dried apricots, and they are delish!! I brought 2 dozen to work :) Oh, and I've never used cardamom in this recipe. I never have any on-hand! UPDATE: When I make this recipe, I often use a combination of dried apricots, cranberries and raisins. SO yummy

Shreddies No-Bake Peanut Butter Squares

I had really high hopes of these no-bake squares. I made them for Canadian Thanksgiving this past weekend and they turned out VERY crumbly. The whole thing pretty much fell apart. And there was by no means enough chocolate to cover the top. When I tried to spread what little chocolate I had, the crumbly under-mixture ended up mixed in. The taste was good overall, but the presentation was terrible and I doubt I will make these again.

Beef Barley Stew

I made this for a second time with much better results. I used more beef and made sure to use wine to get a nice depth of flavour. I'm eating leftovers from the freezer today for lunch and it's just as yummy as when I first made it! I will be making this again!

Coconut Cream Pie

AWE-SOME! As some other reviewers suggested, I used a can of coconut milk and the balance of regular milk. I also covered the pie with whipped topping and additional toasted coconut. Not only was it a show-stopper, but it was soooo delicious. I will be making this one again for sure!

To Die For Blueberry Muffins

This is one of the first recipes I discovered in AllRecipes several years ago. I have made them numerous times over the years, but only made the crumb topping for the first time yesterday. I must say, I prefer the crumb-free version, but I just heard my boyfriend say 'These muffins are even better this morning! What do you MEAN you don't like the crumb top?' :) For me, I really like the plain and simply sweet batter, which compliments the blueberries perfectly.

Lentil Soup

Very delicious! As other commenter mentioned, I used 4 cups water & 4 cups broth. I also used balsamic vinegar, which really did add something special. I doubled the carrots & celery as well as adding 1 chopped zucchini near the end of cooking. I used frozen spinach, which I just tossed in near the end and I pulsed the whole thing with my immersion blender, which made the consistency a little thicker, which was nice. A great success for my first attempt at making lentil soup!

Gramma Beaton's Brown Sugar Beans

I made these overnight last night. I used Northern beans, which I prefer for baked beans. I used a whole pound of bacon and the flavor of the bacon is really nice. I found the overall taste REALLY bland. So this morning I added: ~ 2 tbsp Worcestershire, 1/4 cup ketchup, 1 tsp onion flakes, 1 tsp dry mustard and about 1/4 cup of real maple syrup. There's already an improvement. I will serve them tonight to my BF, who tasted them this morning and also thought they were bland. We are really partial to Clark's canned baked beans and I have been trying to replicate their recipe for quite some time.

Sally's Spinach Mashed Potatoes

Who would have thought that something with this much spinach could taste so good?!?! I used a whole package of spinach, even though it looked like a lot, 7 medium sized potatoes, 1/2 cup butter 1 small container of sour cream. 2 chopped green onions, 2 cloves garlic. I chose not to put any dill in it. I had no cheddar, so I put 4 Kraft singles on top, covered with some crumbled goat feta, and baked at 400 for about 30 minutes along with a huge fillet of salmon. Absolutely amazing and everyone loved it!

Granola

This granola is totally addictive. I added about a cup of chopped almonds, and about 1 cup of each dried cherries, dried apricots and raisins. I cooked it 2hrs, stirring every 15-20 minutes. I also used equal parts of banana and prunes, not dates, and added some coconut. YUM! You can add exactly the type of add-ins that you like! it also keep for a very long time in a Ziplock bag. I'm not the type of person who eats the same thing every day, so I've had my last batch for at least 4 weeks now and it's still just as delish as it was on day 1.

Garlic Scape Pesto

I have to admit, this recipe wasn't my favorite. I had never used garlic scapes before, and I doubt I will again. Scapes are quite tough and the resulting purée remained slightly chunky, even with additional olive oil. I served the pesto over spaghetti and had to eat some of it on toasted baguette to cut the intensity. It's REALLY garlicky and super strong. I think it might be good if you turned it into a cream sauce or added it to other dishes as a garlic replacement, but as a straight-up pesto, I'm not a fan.

Stuffed Cabbage Rolls

Last night was my second attempt at cabbage rolls after a horrible failure the first time. I made this recipe pretty much exactly as written and the cabbage rolls were seriously delicious! Next time I would season the meat a little more with lemon juice, Worcestershire and some garlic powder. I might also make my own sauce as I'm not overly fond of canned soup. An excellent and fairly quick recipe!

Peanut Butter Pie

I made this yesterday for a Sunday night Game of Thrones get-together. I nearly doubled the peanut butter, I switched the confectioners sugar for fine granulated sugar (what was on-hand) and omitted the peanut butter cup decoration. The pie was a HUGE hit :) Next time I might fold in the whole tub of Cool Whip and have no topping.

Apple Cake

Thanks to IBNITWIT who suggested NOT peeling the apples!!! It was a HUGE time saver and the taste is great! This cake is fabulously moist. I'm going to take it to the office because I can't possibly eat that much cake in a day or two. Thanks for this recipe :) UPDATE: Was asked by several co-workers for the recipe :)
