Romaine Rice Tuna Salad

I used basmati rice, which I prefer and I used a huge handful of spinach instead of the Romaine (again, which I prefer). I used some goat feta, which changed the taste and I might not do again. I found there was really a LOT of rice with 2 cups uncooked. I didn't use it all in the recipe and still found it was a bit much. 1 cup uncooked rice would have been enough.

To Die For Blueberry Muffins

This is one of the first recipes I discovered in AllRecipes several years ago. I have made them numerous times over the years, but only made the crumb topping for the first time yesterday. I must say, I prefer the crumb-free version, but I just heard my boyfriend say 'These muffins are even better this morning! What do you MEAN you don't like the crumb top?' :) For me, I really like the plain and simply sweet batter, which compliments the blueberries perfectly.

Spinach and Pasta Shells

I did make a few adjustments as per other comments. I added a small chopped onion with the garlic, and wilted fresh spinach with it. I added half a can of diced tomatoes, some blanched green beans (cuz I needed to get rid of them), lots of pepper, some salt, along with some kalmata olives and some parm with whole wheat rotini. I think it's even better leftover :) The flavors have a chance to mingle together.

Apple-Cran-Cherry Oatmeal Cookies

Awesome! I couldn't find any dried cranberries, so I used copped dried apricots, and they are delish!! I brought 2 dozen to work :) Oh, and I've never used cardamom in this recipe. I never have any on-hand! UPDATE: When I make this recipe, I often use a combination of dried apricots, cranberries and raisins. SO yummy

Broccoli Cornbread

Quite delish. I made this to go along with tacos. It was very simple. I used a little more cottage cheese and broccoli and used an immersion blender to mix and chop everything together. texture and flavour were both good.

Broccoli and Cauliflower Casserole

This is one of the first recipes I ever made from this site. I couldn't remember where I got the recipe and tried to reproduce it a couple times without success. I finally came across it today and I'm making it right now. Here are the couple changes I made: used 1 cup brown minute rice, about 1/4 cup of butter, 1/2 a large brick of cubed cheddar + 3 Kraft singles, 1 can of mushroom soup, no milk and Premium Plus crackers on top. Awesome! UPDATE: If I try to make this without the recipe, it always fails

French Leek Pie

Simply divine! Added 4 sliced mushrooms to the leeks when cooking. It was a little runny and I might put some flour in next time. And maybe some bacon. I should have thought of that. I even had some on hand!! UPDATE: I should have re-read these reviews before making this again! lol I had bacon on hand AGAIN and didn't add it in! But it really is SUPER FABULOUS. I have another crust and more leeks, so I'll probably make another next week.

Granola

This granola is totally addictive. I added about a cup of chopped almonds, and about 1 cup of each dried cherries, dried apricots and raisins. I cooked it 2hrs, stirring every 15-20 minutes. I also used equal parts of banana and prunes, not dates, and added some coconut. YUM! You can add exactly the type of add-ins that you like! it also keep for a very long time in a Ziplock bag. I'm not the type of person who eats the same thing every day, so I've had my last batch for at least 4 weeks now and it's still just as delish as it was on day 1.

I made this recipe as-is and could barely keep my hands off them! I love my deserts SWEET, so this was perfect. My boyfriend really liked them too and I managed to make them with what I had on-hand :)

What I learned from this recipe is that I cannot bake :) It tasted good, but the cake was hard like a rock. Apparently I don't know when to stop mixing! I doubt I'll make it again.

Canadian Molasses Cookies

These were really great! Super chewy! I used real ginger and they are quite spicy but so yummy. They're just like Gramdma Molases candies you get at Halloween here in Quebec. The same brand makes a cookie as well. These ones were WAY better than the packaged ones!

Cottage Cheese Roast

Not my favorite. I added some sliced cooked mushrooms and green onions to the mix and used chopped mixed nuts, since it's what I had on-hand. Not very meatloaf-y, but reasonably tasty. Just not what I was expecting.

Cream of Cauliflower Soup II

Simply awesome :) Update: I have made this soup several times now and each time it's great. I always use cauliflower, carrots and potatoes, plus whatever other veggies I have on-hand. Broccoli, celery, mushrooms, sweet potato. Delish. And always so soo creamy! YUM!

Barley Mushroom Risotto

This recipe is a keeper. I have made it many times and have used regular rice in the place of the barley as well (just to switch it up). Great way to use up mushrooms. Delicious as a side dish or a main.
