Tuna Egg Sandwich

It was a tad dry and it didn't have too much "zing" so I added a teaspoon of Dijon mustard and balsamic vinegar and it was delicious. :D

Stove Top Tofu Chili

This was VERY bland even after tripling the chili and adding some of the amendments others have left in the comments. I would not make this again, it really doesn't resemble the taste of chili very well.

Garlic Pepper Seitan

I thought this recipe was delicious and so easy! The only change I made was to cut the olive oil in half because 1/4 cup seemed excessive and with the reduction I still found it to be absolutely delicious. I did the last part with the cornstarch but I didn't see the point as there was no liquid prior to adding the corn starch. Any insight?

Hot 'n' Spicy Omelet

I used this as a base for my omelette but I added some stuff to it to "spice" it up. I added juice from 1 lemon wedge and one lime wedge and ate it with some salsa verde. It was pretty dang good.

Bacon-Topped Brussels Sprouts

These were pretty yummy and they were really easy to make. I used extra-virgin olive oil instead of butter though but they still turned out pretty good and I'm not a brussels sprouts lover.

Broccoli with Rigatoni

This recipe was delicious, filling, and quick. I did take the advice of the previous posters and added a bit to the recipe and I do believe that without the extra additions it wouldn't have been as good. Since I try to eat healthy I cut the oil & butter in half (and it was more than enough). I added red pepper flakes to the broccoli and garlic, cooked for about 3 minutes and then added the broth as instructed. After the broccoli was cooked, I added the pasta along with lemon juice, basil, and shredded mozarella. Pretty yummy. :)

Most Excellent Sandwich

This sandwich was pretty good but I think I put too much alfalfa sprouts and they took away from the flavor. I would definitely recommend a splash of oil and some wine vinegar as well as some black pepper.

Baked Sweet Potatoes

This was delicious. I only used 1 tbsp of olive oil because I'm not too keen on unnecessary calories and it was just wonderful. I used a 1/2 tsp or oregano, salt, and pepper each as I assumed we weren't supposed to use 2 pinches of each as I see in the recipe. I also followed the idea of one of the previous posters and covered it for half of the cooking time. This is definitely a keeper.

Black Bean Vegetable Soup

Pretty yummy & hearty soup. I did make some amendments as suggest by previous reviewers and I think without them, it wouldn't have been nearly as good. I added a can of refried beans so I wouldn't have to deal with blending beans together + extra chili powder and less broth. It's super easy to make and cheap. :)

Orzo with Tomato and Fried Tofu

I made orzo for the first time last night, using this recipe, and it turned out quite well. I browned the tofu a bit (about 5 mins) before adding the onions, garlic, and two handfuls of mushrooms. I also added some red pepper flakes to give it a bit more flavor. Unfortunately, I completely forgot the veggie bouillon cube for the pasta -- I will have to try that next time as it was missing just a BIT of flavor. I think throwing in some greek olives with the feta would be delicious. By the way, tofu takes AT LEAST 15 minutes to brown on medium-high with all the veggies in there so it wouldn't be a terrible idea to throw the scallions & garlic in 10 minutes into browning the tofu as mine got pretty shriveled up.

Lentils with Tomatoes

This was excellent! I did switch up the ingredients a tad by adding a teaspoon of garlic and a can of chickpeas but everything else was just as stated and it was DELICIOUS! I also did mix a little bit of broth with the water to give it just a bit more flavor. Definitely a keeper.

Guacamole

The guac was good but was lacking in flavor in my opinion. I am very fond of a smoky guac I make and this was just flavorless in comparison. I think it could use almost double the salt, cumin, extra lime, and some chipotle chilis in Adobo would make it far more delicious.
