I made some minor changes, and we loved it! First of all I was trying to use up some of the abundant peppers and tomatoes from my garden, so I didn't used canned tomatoes...just peeled some fresh and it tasted wonderful! I also used ground turkey (97% fat free) and browned it with the onions and a couple cloves of garlic. I cooked my rice prior to mixing it with the meat so that it wouldn't be crunchy - I grew up with crunchy stuffed peppers and never want to have that again! Since everything was precooked prior to baking in the oven...I only found it necessary to use one can of condensed tomato soup and about 1/2 can of water. They were wonderful and my husband would like me to make these weekly!!!
