Big Soft Ginger Cookies

These really were as good as the other reviews rated. I forgot to flatten them while I was cooking one batch and it didn't seem to matter. If anything they had a better shape.

Slow-Cooker Chicken Tortilla Soup

House smelled great all day. I cut up the chicken and added it raw, since it was going to be cooking all day. I also added black beans and wanted it a little thicker so I added some corn flour. Yum!

One Week – Six Dinners – Just $100

This was great! It really took the work out of preparing a weeks worth of dinners. The roasted chicken took planning ahead, but was so handy and made the rest of the week easy. There was no more worrying about defrosting meat, it was ready to go. I was even surprised by some of the recipes. They were delicious. And it was easy to substitute some of the items that I like to make from scratch (i.e. homemade tortillas, spanish rice, etc.)

Albondigas

Yummy recipe! I cheated on the meatballs because I was sick and needed an easy way out, so I added Costco meatballs. They were good. The only thing I want to try next time is to add rice to the meatballs instead of bread crumbs. My mom always made albondigas growing up and I think the rice is delicious and more authentic.

Blueberry French Toast

It was as good as it sounded. I did forget the syrup and think it needed it to make it a little sweeter. Also I cut back on the eggs as one reviewer suggested but next time I'll add the full dozen. I was a little short on liquid with only 9 eggs. I also added Cinnamon Plus and vanilla and recommend that. Next time I'll try spreading some the cream cheese on the bread and cube the rest.

Sandy's Chocolate Cake

After failing with other chocolate cake recipes, I tried this one. Delicious, moist, perfect cake the first time! However, I was making cupcakes for my son's birthday and ended up with 48 cupcakes!
