Fudge Pops

These were SO good!! They were simple to make, the consistency was creamy, and the flavor was perfect! These were refreshing on a hot day and I will definitely be keeping these on hand all summer long. I used 2% milk and added a tsp of vanilla extract. YUM!!

Chicken Chimichangas with Sour Cream Sauce

Ohhh yummmm!! These are SO good, granted I made a few of my own tweaks (hence the 4 stars...5 with my improvements though!), these really are delicious. I've made them twice, once following the recipe exactly and once with some changes. While it was great the first time, it was WOW the second! :) Here's what I did: double all the spices except salt (this adds SO much and not overpowering at all; really flavors the meat), cut the water down to 2 cups to speed up the time it takes to absorb, used pepperjack cheese instead of just montery jack, baked in a 400 oven for 10-15 min instead of frying. The first time I made the sauce I felt it was a bit bland, so this time I: made it in the same pan I cooked the chicken in (infusing it with the flavors and spices of the meat), added montery jack cheese, and a bit of lemon juice to brighten things up...made all the difference, the sauce was a hit! With my minor changes, this dish was a stand-out for my family and one I'll be making again and again!

Deviled Eggs

Ohmygoodness, deviled eggs are my faaave! And these did not let me down! I halved the recipe using just 3 eggs as I was wanting to find the perfect recipe first before making a whole batch...I think I found it with a couple tweaks (hence the 4 stars, with changes it's for sure a 5!) I would definitely recommend cutting down on the vinegar and the salt, otherwise these flavors were too strong. The first time I made I halved the salt and it was still too much. Halving again was perfect. I also used a scant 1/2 tsp (remember I halved recipe) and this helped offset the strong vinegar-y flavor. Otherwise I followed the recipe exactly topping them off with a bit of pepper and paprika...and mmmm perfection! Thanks for a great deviled egg recipe; this one will for sure be my go-to!!! :)

Easy Mexican Casserole

This is FANTASTIC!!! Honestly, when I saw the great reviews I thought, "Really? It looks to simple to be that delicious!" but my gosh is it!!! Yum! I left out the olives completely just because I don't like them and added 1/2 packet of taco seasoning to the meat as it was browning. I only used 2 cups of crushed tortilla chips and that was plenty. Use the chili beans; no, it doesn't seem 'Mexican-y' but it adds a great flavor. I doubled the green onion because I love it and it really tastes so good in this dish. I used a mix of cheddar and taco blend cheese on top. The only change I will be making for next time is to leave out the sour cream. When it baked it got an almost dry, 'curdled' like texture that I wasn't a fan of. I will just serve it at the table to dollop on top as I love dour cream and like the way the coolness of it offsets spicier Mexican dishes, but this us just my preference. What a great, easy casserole...Thanks so much for it!!! :)

Mom's Zucchini Bread

Great bread base! You could really do alot with this to mix it up (like shredded carrot, raisins, pineapple, and walnuts). I made this as zucchini bread for the first time and WOW...so moist and tasty! Per other's suggestions, I decreased sugar to 2 cups and used 1 white and 1 brown, I used 1/2 oil and 1/2 applesauce, increased the zucchini to about 3 1/2 cups, eliminated the walnuts, and added 8 oz drained crushed pineapple and a crumb topping. Mmmmm! You cannot go wrong with this; my family ate almost a whole loaf just today...Thanks for a delicious recipe!

Fluffy Pancakes

Great recipe! Thanks, Kris. I was having a "homemade pancake craving" the other day and whipped these up for my family. My husband was quite impressed as he's only ever made them from a box (and apparently never noticed that I don't, haha). We were all quite pleased and decided these would be a staple in our home from now on! I would say that I didn't think they were quite as "fluffy" as they claim to be...but that could have been a fault on my end! I followed the recipe exactly (except to add some vanilla as others suggested. I also did not have any vinegar on hand so I used lemon juice to sour the milk...1 tbsp to 1 cup milk ratio.) I would also recommend definitely doubling this recipe as a double batch fed my family of five (3 of which are 4 and under) perfectly with just a few left over. Overall, YUM and one I will make again and again!!!

Fresh Salsa

This is delicious salsa! You may never go back to store bought canned and why would you? This is so fresh and vibrant and flavorful, especially after being left to sit awhile and allowing the flavors to mingle and intensify. I followed the recipe as written only adding a splash of lime juice and some chopped, fresh cilantro. The jalapeno adds enough kick without making this spicy. It's a great, basic recipe that the only family can enjoy because of it's mild spice. This does keep well covered in the fridge and really only keeps getting better with time as the flavors blend. Enjoy!

Grilled Fish Tacos with Chipotle-Lime Dressing

Yum!!! I give this 5 stars on the marinade alone...delicious! I served this to my family for dinner last night to rave reviews...even my extremely picky 3 and 4 year olds gobbled it down! I marinated the fish just an hour and a half and there was still plenty of flavor absorbed. I had no problems with the texture of the tilapia (as others did); I thought it was perfect. I shredded the fish onto warmed flour tortillas topped with cabbage, tomato, red onion, cilantro, taco blend cheese, and the dressing included with this recipe. Don't overdue the dressing or it will overpower the flavor of the tacos; otherwise it's a great accompaniment. I did leave out the adobo in the dressing as I couldn't find it in the store; I added a 1/2 tsp of hot sauce instead for alittle kick. The dressing isnt amazing but I have no complaints on it either. Together, all the flavors blend to make one heck of a dish! Try 'em!!! :) (I served these with fresh homemade salsa and queso and chips...this ended up being probably one of my family's favorite meals ever!)

Savory Sage Sausage and Vegetable "Stoup"

I made this the other night for dinner and was not disappointed. It came together rather easily as I used canned corn and green beans which made this quick to throw together. It was hearty and not short on flavor; very savory. I will say it made more than just 6...maybe more like 8, as my family of four each had a bowl with plenty left to freeze for another meal. My husband raved about it; I however was left wanting a bit more...can't quite put my finger on it but since I'm more of a "creamy soup base" person and this is broth-y, that could be it. We did sprinkle on parmesan cheese, which I think lended a nice flavor to the soup. Will probably save and make again in the fall as this would be hearty and filling on a cold night!

Korean BBQ Chicken Marinade

A pretty good marinade for chicken! I followed the recipe exactly, cutting it in half for 4 large chicken breasts. I used red pepper flakes in place of the chile sauce and DID use the lemon juice, which I think brightens the flavors. I marinated for 24hrs and was afraid it was going to end up being to long and that the soy sauce would make it too salty, but this did not happen at all. It was excellent in flavor and the chicken was tender and delicious. However, I did wish it was a bit more "saucy" as the marinade just kind of soaked into the chicken. Maybe next time I will baste as I grill or serve extra marinade on the side as a dipping sauce. Will definitely make again!

California Grilled Veggie Sandwich

Please make these. You will not regret it! Not only are they so delicious, but they make for such a colorful, gorgeous meal. THE quintessential summer recipe! I grilled all the above veggies also adding tomato and basted with a mixture of olive oil, balsamic vinegar, s&p, thyme, rosemary, and garlic as others suggested (DO this! Gives the veggies awesome flavor). I used tomato basil foccacia and after spreading with the mayo and sprinkling w/ feta, I put the foccacia slices on the grill for several minutes then piled the veggies over the top and served open faced w/ my roasted corn salad on the side. WOW! So, so good and such presentation for company! Thanks for this recipe...My family will be making these ALOT during the summer! :)

Slow Cooker Swiss Steak

MMMMMMMMMMMM!!! :) This was such a hearty and delicious winter meal that my husband and I ate up (the kids did NOT, I hate to say...but they're picky so that is not much of a surprise!). I followed the recipe exactly, even sauteing the veggies and browning the meat ahead of time. I did add some garlic powder to the meat. I cooked on low for 8 1/2 hours and the house smelled delicious! I went back for seconds...and then thirds...as did my husband. Served with mashed potatoes and bread and butter...SO GOOD...Will be a winter staple!!!

Slow Cooker Chicken Stroganoff

What a simple and wonderful crockpot meal to keep on hand! I followed this recipe's ingredients exactly...The only change I made was to increase the sauce amount a bit (as I was serving 6 people) by using 1 1/2 pkg. cream cheese and 1 1/2 cans of cream of chicken soup. The other amounts I left the same and it turned out wonderfully. After you cook the chicken in the seasoning and butter, it literally shreds apart in the slow cooker; so moist and tender! I served over egg noodles. I made this for my family plus my mother and sister when they came to visit and they had second helpings! Will definitely be making this simple yet flavorful dish again! Meatball Nirvana

DELICIOUS! I whipped these up as a main dish for my family's dinner tonight and was very pleased. Moist and flavorful sum these up. I made them kid-friendly and not too spicy by omitting the hot pepper sauce and cutting the crushed red pepper flakes down to 1/2 tsp. They still had a bit of a "kick" but were not spicy! I also used 1 egg in place of the skim milk. They baked up in 20 minutes and I served them with a "meatloaf-style dipping sauce" of 1/2 cup ketchup, 2 tsp. dry mustard, and 3 tbsp. brown sugar mixed and warmed through, veggies, mac n cheese, and applesauce...a kid friendly meal! Will definitely make again as a family meal or as appetizers for company. Thanks for the recipe, LTH!

Banana Banana Bread

I had a few bananas I wanted to use up and so I got on here earlier today to find a good and basic banana bread recipe for my 3 year old daughter and I to bake together! I found what I was looking for in this recipe...And I have to say, it will become a staple from here on out! It was SO quick and easy to throw together and came out very delicious and so moist! I hate dry breads and this one definitely is not! I did a few modifications (added a sprinkling of each...Cinnamon, Nutmeg, Allspice, and Ginger. And a 1/2 tsp each of Vanilla flavoring and Almond flavoring. I think I even could've gone a bit heavier on the spices.) I ended up using 4 large bananas mashed, which came to about 2 cups and cut the sugar down to 1/2 c packed. Mine baked up nice and golden brown with a crunchy top and a soft, moist center at 350 for about an hour an 5 minutes. My daughter is so proud of the banana bread she made and the rest of the family can't get enough! Thanks for the recipe and if you're considering making this...Don't think, do it! :)

Chicken Puffs

Made this for my family for dinner tonight. So quick and simple to throw together and very delicious. I grew up with a version of this that uses cream of chicken soup, onion, chicken, and cheddar cheese and it has become a staple in my household today. This was a nice change-up from that recipe. My three year old daughter wanted to help and it was an easy recipe that she could participate in...And then her "usually picky self" ate it right up!!! The only change I made was using Chive and Onion cream cheese instead of the regular, as others suggested. I thought it added a really nice flavor without being too overwhelming. Definitely recommend!!!

Baked Pineapple

YUM! I made this for my (very large) family Christmas dinner and it was a hit!!! Even the skeptics in the family went back for more. Cheesy Ham and Hash Brown Casserole

I made this for my family for dinner tonight to the tune of rave reviews! Even my picky almost 3 year old ate it up! I, however, was mixed on how I felt about it (hence the 4 stars). On the pro side, it came together very quickly and easily, was very cheesy, and made enough to really feed up to 12 people. Cons though, I just really felt like something was missing flavor wise...It just needed that extra "something." Maybe next time I will add onions and peppers as others have suggested. I also thought that for being in the oven an hour, it didn't seem hot enough...perhaps because of the frozen/cold ingredients. I didn't think it was too salty as others thought, but I did reduce the amount of parmesan so that may have helped. Like I said, the family loved this, but I do think heeding some of the other's advice might add a little extra needed flavor and really make this a mainstay recipe!

Tomato and Basil Quiche

YUM YUM YUM!!! I tried this the other night for my family and we thought it was delicious! I added alittle nutmeg as others have suggested and it added a little uniqueness to it. Next time I plan on trying it the way others have suggested it to see which way is better...but honestly this came out perfectly! Thank you!!! :)
