German Chocolate Pie

Reviewed: Aug. 18, 2011
There's a little restaurant in my small city that makes excellent German chocolate pie. Well, I just had to try to duplicate it, so that I didn't have to go clear across town anymore to get it. This did not duplicate it, it FAR EXCEEDED it!! This is the yummiest pie and really does taste like German chocolate cake. I loved it. I made it exactly as written and it was perfect. The German chocolate is just a sweet and interesting flavor, much better than regular ol' milk chocolate and the topping is divine. It makes more than plenty of it, though, so I certainly helped myself to a few spoonfuls. Mmmm...delish! The filling is so rich and yummy, it really does resemble a mousse. My first pie crust didn't work for me, so I had to run to the store to get another and bake it and even though the filling just sat there the whole time, it still tasted great! I wholly recommend this recipe for anyone who likes German chocolate cake. This and a cup of coffee would be a match made in heaven. Thanks for the wonderful recipe!

Rick's Special Buttercream Frosting

Reviewed: Jun. 25, 2011
After reading the comments, I opted to use 1/2 unsalted butter, 1/2 shortening. I do add a bit more salt than it calls for to make up for the unsalted butter, but keep everything else exacly as the recipe calls. I only made 1/3 of this and I still had about 2 cups leftover. I used clear vanilla extract so when I colored it, it came out right. Otherwise perfect!! And don't mind the leftover frosting, because it will be taken care of, trust me!! ;o)

Blueberry Pie

Reviewed: Jun. 25, 2011
If I died and ended up in heaven, this must be what they serve for dessert!!! If you love blueberries, this pie is for you! I do add a bit of lemon juice to the blueberry mixture, but otherwise follow the recipe. Absolutely to die for!

MMmmmmm...so good! Perfect balance of strawberries and rhubarb and turns out perfectly every time! Although, I do make mine lattice-top so it has more room to breathe. Delicious!

Six Can Chicken Tortilla Soup

Reviewed: Jun. 25, 2011
Quick, easy, delicious! The only reason I gave it 4 stars instead of 5 was because it does need a bit of seasoning to it to really make it delish. I add a bit of cumin, chili powder and dried cilantro to finish it off. Yum!

This is an essential recipe in my household, as I ADORE fettuccine alfredo. This makes a good amount and is very easy. Loved it!

Cajun Seafood Pasta

Reviewed: Mar. 30, 2011
I made this for the first time several months ago. I made the recipe exactly as written. WHOA! 5-alarm fire in my mouth! My stepdaughter and I could barely eat it, but my hubby loved it! It cleared out my sinuses, that's for sure! I made it again and backed waaaaay off the spices, only putting in 1/3 of what it called for. It was perfect for us. Once I actually got to taste the seafood and pasta, I loved it! Great recipe, but beginners who are not used to heat should modify this way down and start off slowly. Thanks!

The Best Chicken Fried Steak

Reviewed: Mar. 30, 2011
I made this a few weeks ago and let me tell you, my hubby and I were both so bonkers over this recipe that we will probably never order chicken fried steak in a restaurant again. I made the recipe exactly as written and it turned out perfectly. It really does only take a few minutes per side. It is phenomenal and we will probably use this more often than we should. :) Thanks for the fabulous recipe!

Penne and Vodka Sauce

Reviewed: Mar. 9, 2011
This was good for what it was and pancetta definitely added good flavor. However, I was disappointed, because it really just tasted like tomato soup with pasta mixed in. *shrug*

Emily's Excellent Taco Casserole

Reviewed: Mar. 9, 2011
This was okay. I was looking for a quick and easy meal and this fit the bill. However, it just seemed more like nachos than an actual taco casserole. Next time I will just make nachos. Thanks.

Double Tomato Bruschetta

Reviewed: Aug. 21, 2010
I made this for my housewarming party last night and everybody loved it! I used fresh mozzarella instead of shredded and it was perfect. The balsamic vinegar really gives it a good bite and the roma tomatoes and sun-dried tomatoes tasted fantastic together. I made the tomato topping the night before and put it all together 10 minutes before the party was to start. Overnight really gave the tomatoes an extra tastiness. Delicious and I will definitely be making it again! Thanks for the great recipe!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Aug. 21, 2010
I made this for the first time last night for our housewarming party. Everybody LOVED it and asked for the recipe! I made it the night before and it was absolutely fantastic. I used strawberry-rhubarb jam for the preserves, and followed the recipe to the tee. It was perfect and everyone loved the cinnamon chips as well. They couldn't believe that I made them out of flour tortillas! I will be making this for years to come. It's delicious as is and I wouldn't change a thing!
