Pear and Blue Cheese Salad

I made this salad for a gathering and it was the hit of the meal. Everyone asked for the recipe and on a scale of 1 to 10 said it was an 11. Here are my modifications. I did not candy the pecans. Just roasted at 375 for about 6-8 minutes. I had to switch the cheese to feta for one person, and I think blue cheese would be better, but for those who don't like blue cheese, this is still a great option. I also used light mayo, but did buy roasted walnut oil and pure maple syrup for the dressing. The second time around I don't think pure maple syrup is necessary. And EVOO could be fine as a substitute for the walnut oil, but maybe not quite as good. It makes enough for more than two salads, but I can't wait to eat some tonight with dinner. Really yummy. It may be my new go-to salad recipe!

Angel Pie

This is the most delicious dessert I have ever made-light, refreshing, and tangy. If you like lemon desserts, you must try this one! I do add about 1/8 cup of the whippied cream to the curd to make it easier to spread. It doesn't change the flavor or intensity of the filling. I don't think the whipped cream needs any sweetening at all, but DON'T forget to well grease the pan!!! So tasty and wonderful!

Red Garlic Mashed Potatoes

Really yummy mashed potatoes. I added 2 tsp minced garlic from the jar and some salt to the boiling potatoes, used a bit less butter (it has to be real butter though!) and did half milk/half cream. I followed the rest of the recipe for the most part. Definitely a keeper for our family.

Easy Teriyaki Chops

I made this with sherry vinegar, lite sodium soy, and minced garlic. My husband loved the pork chops, but he especially liked the remaining marinade that I boiled on the stove and added as an accompaniment. He thought it tasted like a good Jack Daniel's sauce. We drizzled it over jasmine rice and veggies. Next time I will thicken it with a bit of corn starch. My kids also enjoyed the marinade. Given the fact that I always have these ingredients on hand, I will definitely make these again. It would be good with another meat as well.
