Brennan's Irish Soda Bread

I wish I didn't listen to all the reviews and had instead baked it for the full 40 minutes. I baked it for 30 and it was still doughy inside. Next time I will follow the original recipe. For the record, I used soy milk, as I always do in baking.

Eggless Peanut Butter Cookies

I try to avoid using eggs so I gave this recipe a shot. I added more flour as suggested by other reviewers and these were ideal. The first batch, I kept in for the lesser amount of time and they came out very soft; the second batch, I left in for longer and they were cripsy. In both cases, they were delicious and gone in one day! I will be making these again.

Mini Cheesecakes III

I used Bailey's Irish Cream instead of lemon or vanilla but since I used a little extra, I put in some flour so they would set. It worked well. :) They did crack very much but I don't care; I made a frosting for their tops.

Pumpkin Squares

Exactly what I was looking for, a delicious, moist pumpkin cake that could be cut into bite-size squares. I used a simple cream cheese icing from another recipe and this was absolutely perfect! I also accidentally left them in the over for about 10 minutes longer than they should've been in and it didn't affect them whatsoever, so that was nice!

Copycat Panera® Broccoli Cheddar Soup

I used half and half and vegetable stock and omitted the celery. I didn't understand the part when you just simmer milk and broth with the already-cooked onions so I completely omitted that part. I also steamed the veggies first so it was done faster and only used half the cheese, which was PLENTY. I'm a cheddar fiend and I found half the amount to be plenty, probably because the soup was already thicker because of the half and half. It was amazing though. A good recipe to start from!

Graham Cracker Crust

Cheesecake Bars

It gets four instead of five stars because of the changes that need to be made, but once the changes are made, 5 stars all the way! I did a graham cracker crust, baked for 5 minutes. I doubled the filling (frankly, it could have been tripled) and omitted the lemon. I used an electric hand mixer and did the cheese first by itself. I baked for 35 minutes at 300. These are positively sublime and I finished them in a day. :x

Pumpkin-Oat Scones

Wow, it didn't even dawn on me that this recipe had no sugar! It DEFINITELY needs sugar. Throw a quarter cup of brown sugar in there or something. They're good but just... not right without a touch of sweetness. I hate that drizzle powdered sugar icing so I left that off.

Apple Pie Muffins

YES. After a couple attempts at muffins that were absolutely horrible and a waste of time and money, I was THRILLED to find this recipe. Truly spectacular. I am vegan so I used soy milk (Silk plain) instead of buttermilk, Earth Balance instead of butter, and applesauce instead of the egg (standard substitutions) and these are just wonderful. I agree with some others that a little cinnamon in the actual cake batter would be beneficial but I am so pleased. These are almost like cupcakes.

Best Ever Jalapeno Poppers

I didn't use bacon and added salt, pepper, and garlic to the cheese and breadcrumbs but these were stellar. What a great recipe. Author wasn't kidding about the gloves though... I burned my lips and nose by touching them accidentally, watch out!

Traditional Hot Cross Buns

Very good, surprisingly light and fluffy. As others have said, you have to double the icing recipe. I left out the fruit and allspice because I'm not a fan and used soy milk instead of dairy milk. They're very good but if I make them again, I'll add more cinnamon and leave the vanilla out of the icing (it gives it an odd taste). The "prep time" is an error because it forgets the hour and a half of rising that needs to be done which seriously threw me off! I only picked this recipe because of the short prep time then I got to the rising and..... sigh. Oh well!

Sour Cream Pound Cake

I have high hopes for this pound cake, but it was too good to be true, for sure. :( Oh well. This is the kind of recipe that burns on the outside before it is cooked on the inside. The outside was almost black and the middle was still dough. The edible parts were definitely tasty, but most of it was garbage. Maybe cooking it longer at 350 might be better? Disappointing.

Gnocchi I

The recipe was fine, but the gnocchi were slightly rubbery, too heavy, and flavorless. There's an amazing ricotta gnocchi recipe on this sight that gives light, flavorful gnocchi and I will continue to use that recipe because this one isn't nearly as good.

Ricotta Gnocchi

For whatever reason, I did not expect these to be this good. I didn't use the sauce so I'm not commenting on that, but the gnocchi themselves are wonderful. I had to add about another half cup of flour (and I didn't drain the ricotta because I used a brand that definitely had no additional water) and boiled them from about a minute. Really quite amazing.

Soft Chocolate Cookies

Used Earth Balance original (margarine) instead of butter and applesauce instead of the egg. You absolutely DO NOT need to refrigerate the dough or shape it into balls; just make it like a drop cookies. Delicious right out of the oven. HOWEVER, after they cool, they are WAY too sweet. Like, inedibly sweet.

Golden Sweet Cornbread

This cornbread was PERFECT. I did change the recipe, however, to make it vegan by substituting soy milk for the milk and 1/4 cup applesauce for the egg. I also reduced the sugar to a half cup because the recipe calls for a LOT of sugar for cornbread. Suffice it to say, the entire loaf was gone last night within hours of it coming out of the oven. Delicious.
