Bodacious Broccoli Salad

I made this salad for a potluck and got several compliments on it. The only change I made was to omit the bacon since I (and many others at the party) am vegetarian (and to decrease the pepper as several others had suggested in their reviews). I substituted some sunflower seeds to add a little saltiness and crunchiness that the bacon would have provided. I wished that there had been a little bit more of the dressing and might make a little extra next time.

Spinach Quiche

I made this using all ingredients as directed. Instead of heating the spinach in a saucepan, I defrosted it in the microwave, squeezed out the excess liquid, and then just combined all ingredients in a bowl. Even my mother-in-law, who has previously said that she does not like cooked spinach, said that she liked this quiche! I didn't miss the crust and I think this will be my new go-to vegetarian quiche recipe.

Kabob Marinade

I halved this for one pound of shrimp; after putting together the kebabs and before grilling, I also brushed some of the marinade over the veggies. This was very good. It was a bit salty, but since the shrimp had marinated and the veggies hadn't, it was really only the meat that was too salty. I am definitely keeping this recipe to make again!

Stuffed Guinea Squash (Eggplant)

This was very good. Based on others' suggestions, I baked the eggplant skins while the eggplant and mushroom mixture was cooking on the stove. I left out the onion because my husband doesn't eat it, but I added in some minced garlic and about 1/2 teaspoon Italian seasoning. I'll definitely make this again!

Spicy Garlic Lime Chicken

This was really, really good. I made the recipe exactly as directed except that I used lemon juice instead of lime juice (I thought I had some lime juice in the fridge, but I was wrong). The spices made this really flavorful. I found that it took much longer to cook the chicken than the recipe had indicated, and by the time I got my chicken to the right temperature it had gotten a bit dry. If I make this again (and I plan to), I will probably pound the chicken to make it a bit thinner (and uniform in thickness) so that it cooks faster and hopefully doesn't dry out as much. The sauce was very good over rice.

Broiled Tilapia Parmesan

My husband and I both loved this recipe! I followed it exactly, with the exception of adding a sprinkle of Old Bay in with the parmesan cheese mixture. I'll definitely be making it again!

Ginger Glazed Mahi Mahi

This was an easy and very delicious recipe, and I pretty much followed it exactly. The only change that I will make the next time is to only put a spoonful of the simmered sauce on top of the fish; this time, I dumped all of the sauce on top, which was too much.

Cheese Garlic Biscuits I

These were so easy to make and tasted great. I added a couple dashes of garlic powder to the dough, and next time I will probably double the cheese to make them cheesier. I will definitely make these again!

Best Steak Marinade in Existence

Very, very tasty! I made this exactly as directed except I used fresh garlic instead of powdered (two generous teaspoonfuls for a half batch of this recipe) and I did not blend it. I only had time to marinate the meat for two hours, but it still came out great. I will definitely make this again.

Best Cream Of Broccoli Soup

My husband and I enjoyed this recipe. I made the recipe exactly as described, though I did need to add some salt at the end because I found it to be a bit bland. We also garnished ours with shredded cheddar cheese. I will definitely make this again.

Super-Delicious Zuppa Toscana

I only liked this soup okay, and I don't think that I will be making it again. I followed the recipe exactly with two exceptions: I used spinach instead of kale, and I used half chicken broth and half water. (I suspected that with the bacon and sausage the soup would taste salty enough with some water in it, and I was right.) It was a bit too spicy for me, and the texture was a bit too thin. (It might be improved by removed the bacon before adding the liquids, cooking the potatoes as instructed, and then removing and pureeing some of the potato/onion/broth/mixture and returning it to the pot to make the whole thing thicker in consistency.)

Black Bean Lasagna

I loved this recipe. I left out the guacamole and just had some on the side when the dish was finished. I also used about twice as much cheese as the recipe called for, including some Monterey Jack; and used tomatoes with chiles added in. Otherwise I followed the recipe exactly and it came out great! I will definitely be making this again.

Garlic Cheddar Chicken

This recipe was great! I "eyeballed" the proportions of the breadcrumb mixture, and it turned out wonderfully. I used an "Italian seasoning" grinder instead of the oregano and parsley, and I also used Italian breadcrumbs. I'll definitely be making this again!

Creamy Pesto Shrimp

This recipe was only okay to me. I halved the recipe, and used half-n-half instead of cream. I also discovered that we were out of butter, and had to use margarine. The consistency of the sauce was not very good- it looked separated. Also, it definitely needed some salt added. I probably will make this again when I have some butter, to see if that helps.

Steamed Mussels II

I made this recipe with just a few adjustments. I used minced garlic instead of the shallot. I also used significantly more butter than the recipe called for (probably 2-3 times more), and I added a couple tablespoons of milk to make the sauce a little "creamier." It turned out great!

Marinated Cheese

I followed the recipe exactly, and it came out pretty well! I thought that the taste of the vinegar was fairly strong, though. It was a pretty dish though, and nicer than just plain cheese with crackers. I will definitely make this again. (I think in the future I will freeze the cream cheese for a few minutes before cutting it; the "squares" of cream cheese didn't stay very square as I was cutting them.)

BBQ Cola Meatballs

These were a hit at our holiday party! I used frozen meatballs, and omitted the vinegar since some reviewers thought that the sauce was too vinegary. I doubled the amount of meatballs, and quadrupled the amount of sauce, since some reviewers had mentioned that there wasn't enough sauce. There probably would have been enough sauce if I had just tripled the sauce recipe. In any event, I got a lot of compliments on this recipe!
