Octoberfest German Potato Salad

This was perfect for Oktoberfest. I've made it as the recipe states and it is great, but next time around I added my own flavor as usual. I felt bacon was in order for this recipe. so after cooking up the bacon, I sauteed the onion in the bacon grease. I did drain off the grease from the onions before adding, and then when making the dressing I reduced the oil by a TBLS or so. Everyone raved. Great with brats! Make the night before to really let all the flavors marry. TIP: Pour the dressing on the warm potatos and carefylly toss. Use red potatoes and dont peel just slice, it adds a nice color.

Chicago-Style Pan Pizza

I make this often. One tip is, if you can use actual pizza dough, obviously it will be better. Trader Joe's makes a nice ready made pizza dough. For better crust, prepare the dough in the pan and prebake for 10 minutes or so before putting the sausage and toppings on it. Definately don't skimp on the cheese and make sure you have drained the tomatoes well to avoind soggy crust. Delish!

Spanish Rice Bake

Kalamata Olive Tapenade

My mom gave me a huge Costco size jar of Kalamatas and I wondered what I would do with them all. I have now made this twice and it is fantastic. I serve it with butter crackers or baguette and herbed goat cheese. People kept saying, "So you made this?" I like that it is so easy but tastes so special.

Creamy Lemon Cake

This is a very nice recipe. I made it for Mother's Day and everyone raved. I was skeptical because of the mix and "Non Scratch" style, but it was so easy and delicious, I soon forgot about that. This would be great for any Spring or Summer event.

Chateaubriand con Vino Brodo

I have made this several times now, and it always is delicious. I often don't even make the sauce, but just use the meat preparation. This tender cut of meat is great all on its own. NOTE: I saw another reviewer saying that they boiled an expensive cut of beef. The meat should be in a roasting pan on a rack and the water sits underneath for moisture. Don't set the meat in the water. I also have found that it tasted better with well cracked fresh pepper, not whole peppercorns, that's just my personal preference. I find whole peppercorns a little overpowering. I love this recipe.

Quick Black Forest Cake

This was an interesting cake. The texture was surprising. It baked up looking like a brownie, but it tasted like a very moist almost custard like cake. The cherry flavor was great, but I was wishng it was even stronger. I gave it 4 stars because of the use of the mix, but I have to admit, everyone lapped it up. I did follow the advise of others who made the mix as directed and then added the cherries and chocolate chips. Served it with whip cream and a cherry. It looked pretty special.

Delicious Ham and Potato Soup

This was delicious. My cooking nature is to free form it, so I did modify a bit. I cooked up some italian chicken sausage instead of the ham, and when cooking the vegi's, I added a bay leaf, a little margaram,old bay seasning and 2 crushed cloves of garlic. Everything else was kept the same. I would have given it 5 stars even without the mods. I also added some grated parmesean to the flour mixture. DH was trying to eat it out of the pot after dinner! Oh yeah, a shot of tabasco at the table zips it up another notch.

To Die For Blueberry Muffins

This is a very good muffin recipe. I did not use muffin cups, and was afraid that they would not come out easily, but no problem. They had a lovely muffin shape and the topping was attractive and delicious. Make these muffins for your next gathering, you'll get raves.

Cranberry Swirl Coffee Cake

This is a wonderful recipe. I loved how moist it was. I made it in a bundt pan, and put a cream cheese glaze to finish it. I also used 1/2 tsp. vanilla and 1/2 tsp almond extract. Everyone raved. I think that any fruit filling could replace the cranberry if you wanted to shake it up. Blueberry pie filling would do nicely!

Honey Curried Roasted Chicken and Vegetables

I really liked this recipe. The apple and mushrooms went so well with the sauce. My husband said "Is it Thanksgiving again?" The aroma was so wonderful. I served a dollup of sour cream on the side of the vegis to tame the sweetness. I also left out the step of par boiling. I just roasted the potatos and carrots along with the bird and then added the apple and mushrooms when I applied the sauce. Sooo tastey.
