I'm not a big fan of vegetarian anything, but I've been trying to eat more nutritiously lately and this recipe makes it easy. I made this for dinner yesterday and it even went over well with someone who doesn't usually eat chili! I used only one can of chilli pepers, eliminated the jalepenos, and the black pepper and used my favorite super hot sauce instead. I also used diced tomatoes and tomato puree until the consistency was as I preferred.
Oh, and because I'm a southern cook, I added sugar (to tatse)to take some of the tang out of the tomatoes. This was great and I expect the leftovers to be even more delicious today.
