Pumpkin Spice Cake II

Delicious. I had just put my baby down for a nap when I realized I didn't have enough white sugar so I used 1/4 cup white, 1/4 cup brown sugar and it tasted fine. I also added a couple dashes of nutmeg and reduced the oil from 1 cup to 1/2 cup because the oil where I live tastes funny (China) and I didn't want that to impact the overall taste of the cake. I made 2 9-inch round cakes and frosted it with cinnamon cream cheese frosting. It was very light and fluffy and rose very well (maybe thanks to the baking soda).

Giant Chocolate Chip Cookie

This recipe was great. I melted then cooled the butter a bit to make the batter a little bit wetter... I find that this helps the cookie retain its moisture. I cut the recipe in half and put the batter in a 9-inch round pie pan and cooked it for 20 minutes. It was perfectly round and flat on top, perfect for decorating. I added a little more flour because I live above 6,000 ft.

Spicy Honey Mustard Pork Roast

I followed this recipe exactly EXCEPT for the pepper, I cannot imagine using 2 tablespoons of pepper. I used 1 teaspoon and the sauce was great and had just the right amount of kick. I doubled the sauce and added carrots, potatoes, and an onion (half way through)... it turned out pretty good but I would cut the potatoes pretty thin.

Holiday Chicken Salad

I followed the directions for this exactly and it was really good. It could have used a bit more flavor but the company I served it to thought it was great. However, I do not think it really yields 12 servings. Maybe 8.

Roasted Garlic Lemon Broccoli

This is definitely a good option for broccoli but we didn't love it. The lemon juice gave it a huge kick so I think next time I'll back down on it a bit.

Honey Roasted Red Potatoes

I thought these potatoes had a good flavor, but not enough flavor. Cooking them on 375 for 35 minutes just wasn't enough time to really get the sauce to stick to the potatoes. We like our potatoes a little crispy so next time I think I'll cook them on 400 for at least 45 minutes and may possibly double the sauce.

Cake Balls

These are delicious! I made them this past weekend and couldn't believe how easy they were! I didn't have any almond bark or confectioners coating so I used a bag of milk chocolate chips and a few squares of 100% cacao bakers chocolate melted together. Adding sprinkles on top definitely helps cover any imperfections that come from the dipping process. I froze some of the balls before I dipped them and found they were way less likely to fall apart doing that. These are so good, although they could use a better name.

Grandma's Chicken Noodle Soup

I really like this soup. I've made it twice. The first time it turned out perfectly, but the second I doubled the recipe and used a ton of cornstarch and it wouldn't ever really thicken up. I'm planning to freeze the leftovers and when I pull them out add a little more cornstarch and try to thicken it up then. But the flavor is excellent!

Amazingly Good Eggnog

This eggnog is great! I live in China... not exactly the land of eggnog. My husband loved this recipe. We can only get full cream here so I substitute whole milk for 1/2 of the cream. We also leave the rum out and sprinkle a little nutmeg on every cup we serve. It's delicious!

Black Bean and Corn Quesadillas

This is an excellent recipe! I made it tonight and had to substitute cheddar cheese for the monterey jack cheese and tabesco for the red pepper flakes. It was so delicious and even my meat-loving husband agreed!

Pumpkin Butter

I just made this recipe tonight and I thought the spices were way too overpowering. I ended up throwing out my first batch and I'm working on a second one. I think I'll start by adding 1/4 of the amount called for and then add more to taste after that. My husband and I thought it was way too spicy and not good at all with the amounts listed.

Awesome Honey Pecan Pork Chops

Outside of fixing pork in my crock pot, these pork chops were the most tender I've had. I followed the directions almost to a T. The only change I made was to add a tablespoon or so of maple syrup because I was low on honey. They were so tender and delicious. I'm definitely adding this to my list of staple recipes.

Creamy Veggie Fondue

I made this for a fondue party with friends tonight and it was a hit. I followed the recipe exactly but added the milk at the end as other reviewers suggested. I added a bit of lemon juice as a precaution but I don't think it was needed. This recipe does have a little kick to it but we loved it!

Key Lime Pie VII

Holiday Peppermint Bark

This recipe was really good. I was so excited because I am a classic burn the white-chocolate in the microwave woman. So, I used a double boiler. I simply put a metal bowl on top of a pot of water and turned on the stove. I used half white chocolate chips and half dove white chocolate bars because that's what I had on hand. Dove is really good chocolate (for what I can get, I live in Asia) and next time I think I'll use all dove. I also had about 2 tablespoons of crisco, but it melted so well that next time I will use less. I used 5 candy canes (2 for the top and the other 3 mixed in) because I didn't have the normal peppermints and used a 9 x 13 pan (the recipe didn't specify). I'll definitely use this again.

Soft Oatmeal Cookies

"These were the best cookies I've had in a long time." - My husband. I followed the directions to make the dough exactly and then added chocolate chips to half the batch and white chocolate chips and craisins to the other half. The taste and texture were awesome and I was really appreciative of a simple recipe without a mile-long list of ingredients! I'll be making these again!

Cinnamon Sugar Biscotti

This was my first time making biscotti and it turned out fantastic. I followed the recipe exactly and just tried out a few pieces with decaf after dinner tonight and it was delicious. Not rock hard like some biscotti but just right!

Grandmother's Buttermilk Cornbread

This is one of the best cornbread recipes that I've tried from this website. I could tell from the taste of the batter that it was a winner and it was. My husband loved it. I didn't change a thing except cut it in half and cook it in a loaf pan since we were the only ones eating and it was gobbled up.

Grilled Shrimp Scampi

I followed the directions for this recipe to a T and it was just so so, nothing wrong with the flavor at all, just wasn't the best thing I've ever tasted. I was out of parmesan cheese but I wished I had had some to add to the flavor, I think that would've added the right touch. Good for dinner, but nothing special.
