Cheesy Turnips and Carrots

I really don't like turnips and neither does anyone in my family, but we had them in our CSA and a friend had recommended this recipe. This was really good. It was almost like cheesy potato soup. There was none of the bitterness you usually have with turnips. If you are looking to mask the taste of the turnips, this is the recipe for you! I used fat free half and half for part of the milk and I used vegetable stock instead of reserving the cooking liquid.

Lemonade Pie III

Pi day is tomorrow for all you math geeks! This is what my daugther will be taking to share with her math class. I've made this recipe for years. I use the fat free cool whip and fat free eagle brand as well and it's still delicious. I also always make 2 since it's hard to find the smal lemonade. When I'm taking food to a family in the summer months, this is my go to dessert. I take one for the family and keep one for us! Kids and adults like it!

Winter Vegetable Hash

I'm not a big fan of squash or kale, but had some I needed to use and since I like the rest of the ingredients I thought this would be the way to go, and it was very good. Even my picky husband liked it. The portabella mushrooms were really what made it so good! I don't think it would have been as good with regular mushrooms.

Baked Spaghetti Squash with Beef and Veggies

We've made this several times this summer and I can't believe how much my picky kids like it! I've never eaten spaghetti squash before, but we've gotten several through our CSA this summer. The kids really like it and it's much healthier than regular spaghetti. I've made it with ground turkey most of the time and I've used both canned tomatoes and fresh tomatoes. Always a hit.

Mystery Chocolate Cake

I had beets and needed to use them, so I did this. We don't like the taste of beets and you could taste it in this recipe a little. The beet taste wasn't as noticeable the next day when they had cooled completely and they were better.

Zucchini Pie II

Oh. My. Gosh. This tastes soooo much like apple pie. My kids didn't know that it wasn't. We have had so much squash and zucchini that I just wanted to find another way to use it up and this was a great way to do that! I made it exactly like the recipe said.

Cabbage Roll Casserole

I despise cooked cabbage, but we received our second head of cabbage through our CSA this week and last week's coleslaw was still hanging around, so I thought we'd try this. It was great! Even my picky kids liked it! I did as an earlier reviewer did and just put it all in a pot on the stove for 15 minutes after I browned the beef and it was perfect! We will definitely make this again.

Red Chard and Caramelized Onions

I am NOT a fan of cooked greens, but these were really good. I received some rainbow chard in our CSA basket, so I was looking for a good way to use some. This was a good fit. I fixed it exactly as written except I added some garlic scapes that we also received in the basket. I love olives and that was a strong taste. I think if you don't like olives, you might want to cut back on those.

Frank's® Red Hot® Buffalo Chicken Dip

Always a hit! Made exactly as written using crumbled blue cheese. Served with crackers, celery and tortilla chips. It is delicious! My hubby thought it was a little too spicy for him, but he is wimpy when it comes to spice, so I will tone it down in the future for him, but not for me. :)

Award Winning Soft Chocolate Chip Cookies

These were great! They were very light after coming out of the oven (10-11 min), and we thought they might be doughy or under cooked, but they were perfect, just very light in color. We used some regular sized chocolate chips and some mini chips because that's what i had, but honestly, i think I will make with all mini chips next time...more chocolate spread throughout the cookie. Yum!

Marinated Cheese

I have used this recipe for years and I'm in the middle of moving, and can't find it. Luckily I found it here. It is always a hit and a very nice looking appetizer. I especially love to take it to a potluck when I have a busy schedule the day of the event and don't have time to be in the kitchen. That way I make it the night before and it's ready to go when I am! It is good with Triscuits or melba toast or pretty much any cracker!
