Asian Pineapple Sauce

Reviewed: Aug. 13, 2013
I had thick specialty noodles and some fried chicken wings that I wanted to use for dinner. I searched "asian sauce" and this was one of many that came up, and it sounded interesting. I doubled the recipe, but cut back on the sugar about 1/3. It was incredibly easy and the ingredients were things that I always have on hand. My husband asked for a taste as the sauce was thickening and absolutely swooned! Honestly, he went on and on about how amazing it was! I made the noodles and wings, and when everything was cooked, I tossed the noodles with the sauce and arranged each plate with a pile of sauced noodles, two of the cooked pineapple slices (which cook up beautiful and tender, BTW). Then I arranged 4 chicken wings around the pineapple (like a star) on each plate, then spooned more sauce over the wings, and served it with Green Giant green beans w/slivered almonds. It made a gorgeous presentation and my family could not get enough! I got high praises (for what was such a simple meal)! FYI, also I had only used 6 pineapple slices when doubleing the recipe instead of 8, because I thought my family wouldn't really want to eat the pineapple. Wrong! Next time I'll make more than the recipe calls for, because everyone wanted more of them! I will, without a doubt, make this sauce again. Next time I'm going to quadruple it so we have extra and/or for leftovers! Very highly recommend!

Gooey Butter Cake IV

Reviewed: Dec. 27, 2010
I would have given this 5 stars, but I did need to tweak the recipe a bit. The bottom cake crust is amazing, but I felt the top needed more flavor as it was too sweet. I used a yellow butter cake mix and lowfat cream cheese. I added 2 tsp. of imitation butter flavor and an extra two teaspoons of vanilla to the top layer while mixing it. It came outlooking exactly like the photo and cut very nicely after cooling. I brought it to a Christmas gathering and it was the biggest hit (which was amazing considering there were about 15 types of homemade cookies, candies and bars). It is gooey and really sensational. I will definitely make it again and again!!

Parmesan Garlic Chicken

Reviewed: Nov. 21, 2010
My teenage daughter thought this was THE VERY BEST chicken I've ever made! She thanked me so many times. I think I'm a pretty good cook and I've made chicken dozens of ways, but this recipe will definitely be used again and again! I followed the recipe with just slight variation... I didn't have plain breadcrumbs so I substituted Italian Breadcrumbs (they have a bit of seasoning in them already). And the other thing I did differently was to cook it in a small amount of olive oil. Crispy, tender, juicy and delicious!

Day Before Mashed Potatoes

Reviewed: Nov. 21, 2010
I didn't do the "Day Before", I served them right away (same day) and they were wonderful! I've made similar potatoes before, but I never used the onion powder -- I think that's what made them unique and so flavorful. They were a huge hit, and we can't wait to have leftovers, especially since they're supposed to taste even better that way!

Double Chocolate Mocha Trifle

Reviewed: Sep. 16, 2010
This is a decadent & delicious dessert! In a deep glass bowl or trifle dish, the presentation is so pretty and makes people think it was much more difficult to make than it really is. My favorite part is the toffee pieces...the more the better! This recipe serves a whole lot of people or a smaller group with yummy leftovers that even taste good all mixed together!

Actually Delicious Turkey Burgers

Reviewed: Aug. 16, 2010
This burger was so delicious! I only had 1-1/4 lb. of ground turkey breast so I cut the recipe in 1/2. The only difference I made was to add 1 TBS. worsteshire. I cooked the patties with Pam in a frypan and topped each with a slice of reduced fat cheddar. Easy, fast and so yummy!

Popovers

Reviewed: May 30, 2010
I'm thrilled with this recipe! I had a recipe that came with my popover pan which I'd made previously that didn't turn out as good or chewy as these did! I followed the recipe exactly with the exception of adding 1 tsp. of vanilla. Glad I did because they were delicious and got family raves! I doubled the recipe and served them with the Cinnamon Honey Butter recipe, which was awesome! I'll be making these again!

Slow Cooked Corned Beef for Sandwiches

Reviewed: Oct. 13, 2009
I didn't have a lot of time, so I cooked the brisket according the recipe for 4 hours on high in a crockpot, but it wasn't tender enough to serve, so I put it on low and went to bed. The next morning the smell was delicious and the meat was ultra tender! My husband at his with honey, but I loved it with spicy mustard and honey mustard. I'd never made it before, but I'll make it again! There were no leftovers after I served it to my family.

Cider Vinegar Chicken

Reviewed: Oct. 13, 2009
I have a twist on this receipe that is so good! Instead of apple cider vinegar, I use a really good balsamic vinegar and thoroughly brush both sides of skinless, boneless chicken breasts with it, and leave some in the bottom of the backing dish. I place thme in a shallow glass pan and sprinkle both sides with fresh ground seasalt/garlic (available in the spice aisle). Then I put a HEAVY layer of brown sugar over the entire top, and turn the breasts over, once during cooking. The combination of flavors is incredible.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 13, 2009
I've made this twice and both times, it was gone before I got my 2nd piece! My daughter begs me to make it so she can have it for breakfast or in her lunch at school. I serve it warm with some low-fat spray butter on top and it turns out so dense, rich and perfect. This is another very easy and amazing recipe that I'll continue to make on a regular basis!

Honey Mustard Dressing II

Reviewed: Oct. 13, 2009
So fresh & delicious...and EASY too! I will never buy honey mustard dressing again! I served it at a dinner party over fresh greens with homegrown tomatoes and onions, and my guests couldn't get enough. Everyone wanted the recipe! Thanks!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Oct. 13, 2009
I made these cookies to bring for the family of a sick friend in the hospital. They went over BIG! Very easy to make and the pudding does make them chewier, which we all loved. I only had 1/2 bag of chocolate chips, so I added a lot of pecan pieces and white chocolate chips. I'll make these again!

Baked Teriyaki Chicken

Reviewed: Oct. 1, 2009
What an awesome recipe! It was so easy and had WONDERFUL flavor! I made some little changes to mine. I cut the chicken in long strips, melted a little butter in the pan, then brushed the strips with browning/seasoning sauce as they browned. I replaced the cider vinegar with balsamic vinegar. I added the remaining chicken juice, butter and browning sauce from the fry pan to the teryaki sauce and let it all thicken together before pouring over chicken to bake. I only baked the chicken for 1/2 hour, since it was somewhat cooked already. The chicken came out moist and delicious and the sauce was perfect! We ate it over brown rice served with broccoli. My husband kept raving about it! I can't wait to have this again!

Tomato Cheese Crunch

Reviewed: Sep. 1, 2009
I made this recipe to use up an abundance of home grown tomatoes. I thought it would be more like a dip, but oh my gosh...it made an awesome meal! I also used vegetable crackers and garlic salt between the layers and topped it with the panco breadcrumbs (for more crunch)...good advice! I served it with a bowl of soup and corn on the cob. We LOVED it and all of it's cheezy goodness! I will definitely make it again and again!
