Lasagna Spirals

This was SO tasty! I used spinach instead of broccoli, because that's what I like, and no nutmeg based on others' reviews. Also, I added some morningstar veggie sausage cut into pieces (I think I used about 6 sausages). My fiance (who hates to cook) had way too much fun rolling these up.

Cabbage Patch Stew

Yummy and forgiving! It's not really a cabbage stew, because of all the meat and beans, but that means it's an easy way to get veggies in without noticing! I doubled the cabbage and still didn't notice it (which I think is a good thing, cabbage is not my favorite).

Swiss Chard with Pinto Beans and Goat Cheese

DELICIOUS! I used black beans, like others, because that's what I had. Also I just used butter, bc I don't need the extra fat. Otherwise, I followed the recipe. I think even if you didn't make the changes I made it would still be a 5 star recipe! It's the red pepper + lime + tomato + goat cheese that's really lovely!! The chard stands up to this combo nicely, so I won't sub any other green. I think you could use any bean you wanted. Texturally, black beans, pinto beans, and white beans would all be good. We ate this as a side to white fish. I'm going to serve leftovers with white rice tomorrow, since the rice will soak up the sauce very well.

Louisiana Sweet Potato Pancakes

YUM! Cut nutmeg in half bc I don't like it as much, added cinnamon and a couple tbsp sugar, as recommended by others. Left the batter in the fridge over night (def tasted better the next day). Before cooking, added milk to thin it out until it was spreadable, prob 1/2 a cup more. The batter tasted salty, but the pancakes did not. So don't dismiss salty batter! Cooked smallish, thin pancakes on low heat, didn't have any burning or mush issues, but they do take some time. Also - left little lumps of sweet potato (not well mashed) and I was glad I did, it added a nice texture! Served with Blueberry Breakfast Sauce from this site. Next time we'll eat them with cream cheese and honey.

Apple Pie by Grandma Ople

YUM! I mixed the syrup with the apples and put it all in together before covering with my top layer of crust. It seemed like there was a little too much butter, but whatever it came out so well. Also - my apples were huge, so I only used about 5.

Peanut Butter Noodles

I think this is my husband's new favorite thing to eat. I don't like ginger or peanut butter, and I still thought it was pretty tasty! I threw in a little bit of brown sugar since I didn't have enough honey, I think it was an ok substitution.

Mom's Baked Macaroni and Cheese

Like other reviewers say, needs more soup, a bit more milk, and def. the scoop of sour cream. With these changes, this is the best mac and cheese I've ever had!

Chicken and Corn Chili

I love this recipe! I've made it a bunch of times now and my husband thinks it makes the whole apartment smell lovely! The only change I make is using canned "chili ready" tomatos bc they're way cheaper than salsa and I like the taste better.

oh my goodness this is tasty!! i followed these suggestions 1)no old bay, mozzarella, or pre cooking 3)cooked fresh baby spinach in the sauce 4)added a couple cloves of garlic to the sauce 5)skim milk instead of heavy cream 6)seasoned breadcrumbs. I know that's a lot of changes, but otherwise the recipe was easy and good. I do think I could have used less butter (2 tbsp?) Oh, and I'm still glowing from dinner...YUM

Angel Chicken Pasta

Loved it! Doubled the sauce (though I still didn't used the whole seasoning packet) I used 1 can of the golden mushroom and 1 can of cream of mushroom soup (because that's what I had). Also threw in some peas... yum :-D

Hot Artichoke and Spinach Dip II

Fantastic! I use only parm, a bit of fat free sour cream instead of some of the mayo, and reduced fat cream cheese. Made a mistake once by using lower quality parmesan and realized that I love this dip because usually i use a high quality parm and that's what it tastes like!

Grandma's Slow Cooker Vegetarian Chili

Made it as written and with suggested changes (no parsley, oregano, or basil, and extra tomatoes and soy ground beef). I liked this chili as written but loved it without the Italian spices. I don't think the extra tomatoes made much difference to us, except that I guess it keeps it soupy if you're adding the soy grounds since they can be dry. Thanks!

Low Carb Cauliflower Leek Soup

Tasty! Not our absolute favorite soup, but good lo-cal dinner. Served with chicken sausage and sourdough. Roasted the cauliflower and a clove of garlic at 400 for 40, 50 respectively. Since the cauliflower was mostly cooked, I didn't boil it in the broth for long. We can definitely taste the roasted garlic!! Used only 6 c of broth and a dash of thyme at the end.

Focaccia Bread

My first time making focaccia and I think mine came out a little dense (prob my fault) but it's pretty tasty. I do wish I'd let it rise more. It would make a killer pizza crust!

Beet Bundt Cake

I like this but it does have a unique flavor. My beet-hating husband says he swears he can taste the beet, but he still ate three cupcakes out of the oven (with chocolate fudge frosting), so that's saying something! I'm okay with beets, sometimes, but I liked the batter!

Green Bean and Potato Salad

I liked it! It definitely needs to sit in the fridge and probably could use a little less dressing as others have mentioned. I think we put a little extra mustard and worchestershire sauce and a little less vinegar. Served with feta, yum!
