Lasagna Spirals

This was SO tasty! I used spinach instead of broccoli, because that's what I like, and no nutmeg based on others' reviews. Also, I added some morningstar veggie sausage cut into pieces (I think I used about 6 sausages). My fiance (who hates to cook) had way too much fun rolling these up.

Angel Chicken Pasta

Loved it! Doubled the sauce (though I still didn't used the whole seasoning packet) I used 1 can of the golden mushroom and 1 can of cream of mushroom soup (because that's what I had). Also threw in some peas... yum :-D

Chicken and Corn Chili

I love this recipe! I've made it a bunch of times now and my husband thinks it makes the whole apartment smell lovely! The only change I make is using canned "chili ready" tomatos bc they're way cheaper than salsa and I like the taste better.

Cake Mix Cookies IV

Easy and wonderful! Made with chocolate and lemon cake mix and also angel food cake (my husband bought it by mistake). I thought the angel food would be a disaster, but it was still pretty good - interesting texture. I did feel like my lemon dough was kind of greasy with 1/2 c of oil, so I put in closer to 1/3 c in the chocolate cookies. The angel food needed the whole 1/2 c. Thanks for the recipe!

My first time making focaccia and I think mine came out a little dense (prob my fault) but it's pretty tasty. I do wish I'd let it rise more. It would make a killer pizza crust!

oh my goodness this is tasty!! i followed these suggestions 1)no old bay, mozzarella, or pre cooking 3)cooked fresh baby spinach in the sauce 4)added a couple cloves of garlic to the sauce 5)skim milk instead of heavy cream 6)seasoned breadcrumbs. I know that's a lot of changes, but otherwise the recipe was easy and good. I do think I could have used less butter (2 tbsp?) Oh, and I'm still glowing from dinner...YUM

Peanut Butter Noodles

I think this is my husband's new favorite thing to eat. I don't like ginger or peanut butter, and I still thought it was pretty tasty! I threw in a little bit of brown sugar since I didn't have enough honey, I think it was an ok substitution.

As written, this isn't anything to write home about, pretty though! Mine came out super dry, even with a thin layer of mozzarella. I suppose I'll try it again with more butter and we'll see.

Winter Lentil Vegetable Soup

Yum! My husband thought it was just "pretty good", but I thought it was delicious! I added more curry powder and some red pepper, bc we like spicier food. Also, did not preboil the lentils, just added more liquid to the soup.

Hot Artichoke and Spinach Dip II

Fantastic! I use only parm, a bit of fat free sour cream instead of some of the mayo, and reduced fat cream cheese. Made a mistake once by using lower quality parmesan and realized that I love this dip because usually i use a high quality parm and that's what it tastes like!

YUM! I mixed the syrup with the apples and put it all in together before covering with my top layer of crust. It seemed like there was a little too much butter, but whatever it came out so well. Also - my apples were huge, so I only used about 5.

Louisiana Sweet Potato Pancakes

YUM! Cut nutmeg in half bc I don't like it as much, added cinnamon and a couple tbsp sugar, as recommended by others. Left the batter in the fridge over night (def tasted better the next day). Before cooking, added milk to thin it out until it was spreadable, prob 1/2 a cup more. The batter tasted salty, but the pancakes did not. So don't dismiss salty batter! Cooked smallish, thin pancakes on low heat, didn't have any burning or mush issues, but they do take some time. Also - left little lumps of sweet potato (not well mashed) and I was glad I did, it added a nice texture! Served with Blueberry Breakfast Sauce from this site. Next time we'll eat them with cream cheese and honey.

Coconut Curry Tofu

Very good, particularly as a starting place. I've made it a few times and I put it whatever veggies I feel like eating! First time I accidentally bought "coconut creme" which had tons of added sugar, but the hubs liked it this way a lot. I had to add extra curry powder to compensate. Tip - dry roast the curry powder a little (until fragrant) before adding other ingredients, it helps pull out the taste. I agree with others that this is better after a night in the fridge!
