Chia Pudding

I actually made this from looking at a chocolate chia pudding but didn't have any cocoa. Here's how mine is a little different. I made it just for 1 serving and used 1/2 cup original flavor almond milk, 2 T chia seeds, 1 packet domino/stevia blend sugar and a couple drops of vanilla and added a T. of golden raisins and a few pumpkin seeds. I only let it set for about 20 minutes before eating. I'll try overnite the next time. I ate this for breakfast and it was very feeling and tasted very rich. I'll have to get use to the consistency of tapioca though or blend it to see how that does.

Chocolate Chia Seed Pudding

So I guess I actually made a different recipe, but I didn't have any cocoa so opted for vanilla pudding. I used 1/2 cup almond milk, 2 T chia seeds, a couple drops vanilla, some organic golden raisins and a few unsalted pumpkin seeds. I did add a pack of domino sugar/stevia blend and it was just the right amount of sweetness. I'll have to get use to the tapioca texture and may try blending it like another reviewer said. I will also try the chocolate pudding as soon as I buy some. I ate this pudding for breakfast. It was very filling.

Grilled Sea Bass

Excellent. I cooked mine in a tagine on top of onions, potatoes, carrots, green peppers and sliced roma tomatoes. I didn't use any butter just evoo, garlic and cilantro.

Chocolate Lovers' Favorite Cake

This is one of the best chocolate cakes I have made. I couldn't wait for it to cool and had a piece as soon as I took it out of the pan. I used 1/2 almond and 1/2 vanilla. My husband doesn't like icing and this cake definitely doesn't need it. A great recipe!

Sean's Falafel and Cucumber Sauce

Wow! This was delicious. After reading so many great reviews today, I couldn't wait to make it. I didn't have any coriander but it didn't matter. I used half parsley and half cilantro. I cut the salt to about 3/4 teaspoon since many said it was a bit salty. I used a little more bread crumbs. I didn't have all of the ingredients for the dip but followed another's advice and used sour cream. I used the mayo, salt, pepper, cucumber and a little chopped cilantro and it was very good. I baked the falafel as others suggested and after taking them out of the oven, I fried them for a minute in some olive oil. I never liked falafel much because it was always so dry, until I ate at a Jerusalem restaurant while vacationing in Toronto, Ontario last week and they were delicious. I've been wanting some ever since. I see how these can become addictive. Thank you so much for a great recipe!
