Wow! This was delicious. After reading so many great reviews today, I couldn't wait to make it. I didn't have any coriander but it didn't matter. I used half parsley and half cilantro. I cut the salt to about 3/4 teaspoon since many said it was a bit salty. I used a little more bread crumbs. I didn't have all of the ingredients for the dip but followed another's advice and used sour cream. I used the mayo, salt, pepper, cucumber and a little chopped cilantro and it was very good. I baked the falafel as others suggested and after taking them out of the oven, I fried them for a minute in some olive oil. I never liked falafel much because it was always so dry, until I ate at a Jerusalem restaurant while vacationing in Toronto, Ontario last week and they were delicious. I've been wanting some ever since. I see how these can become addictive. Thank you so much for a great recipe!
