Freda's Cherry Supreme Salad

Wonderful recipe and delicious, more as a dessert than a salad for our family, but refreshing and delish. Made exactly as recipe stated. I used Cool Whip the second time I made it and it still turned out great.

Baked Pancakes with Sausages

Very good, very very easy, light and fluffy just like a perfect pancake. Took advice of previous reviewer and added extra baking powder and sugar. It was perfect. I browned the sausages the night before and just took them out of the fridge a little ahead of time. Splurge on a good quality sausage it makes a difference and cut them up into bite size pieces. Was able to throw the pancake mixture together in 5 minutes. Like others said it's so nice not to be standing at the stove making more pancakes while everyone else is enjoying breakfast. Will definitely make this again.

Chicken and Artichoke Minestrone

This soup is soooo flavorful, the sherry makes a huge difference in the flavor so don't leave it out or use the cheap stuff. I made it exactly how it is written but will add an extra can of corn next time (and there will be a next time) cause my family liked the texture and sweetness the corn gave the soup.

Apple Dumpling Cake

REALLY GOOD!!!!!! Used half (melted) butter and half oil for the oil portion and the flavor was excellent. Also sprinkled a little sugar and cinnamon on apples. Serve it warm with vanilla ice cream....heaven

Baked Yam and Potato Casserole

What a great change from the usual sweet potato casserole. I used more sweet potatoes than white and also mixed chicken broth and half and half and it turned out delicious.

Deep Dish Layered Salad

Wow the dressing really does make this salad stand out from the rest of the layered salads. Delicious!! I added extra hard boiled eggs, used 6 slices of cooked crumbled bacon, and red onion instead of green onion. The salad was a hit. But FYI don't mix the dressing til the last minute as salad doesn't hold up well once dressing is mixed in. The salad is great will make again.

Yellow Rice with Meat

Wonderful , flavorful, goodness. I used mahatma "spicy" yellow rice, so I left out the jalapeno. I over did the thyme a bit,( my fault I got over zealous with the spices, I used fresh thyme and rosemary) but it was still phenomenal. I cooked the whole dinner in one big skillet. Cooked the pork chops (didn't use chicken) in the skillet , put them aside , cooked the veggies til soft then threw in the herb/spices for a few minutes then added the rice with the seasoning packet and the water , covered for ten minutes added pork chops and peas then covered for another 15 minutes.....perfection in a pan!! Don't omit the cloves in fact all the spices work together for a wonderful combo and don't omit the squeeze of lemon at the end it adds a freshness and flavor thats delish. If your'e not used to using these herbs give this a try , it will make a believer out of you.

Whole Wheat Maple Quick Bread

Very good and good for you. I substituted buttermilk for skim (its extrememely low in fat and very rich tasting). I cooked my first one 45 min and it was too long, made it dry. I cooked the second one approx. 40 min and it made a big difference, I also loosely covered the top with foil the last 10 min.

Caribbean Sweet Potato Salad

I brought this to my family reunion pot luck dinner and got rave reviews from those in my family with less traditional tastes!!! Like one reviewer wrote its not your typical potato salad, but then again its NOT suppose to be. Its delicious and different and thats why I and others appreciated it and liked it. Next time I would even try it with all sweet potatoes as they were soooo delicious with the combo of other ingredients. T he dressing was awesome.

Charleston Breakfast Casserole

Was very flavorful but next time I would add 1 or 2 more eggs, not enough filling for me.......and do NOT overbake it, knock 5 min or so off the cooking time if you make recipe according to recipe, it is a little too dry otherwise. But all in all lots of flavor and I used cheese and garlic croutons.

Cajun Corn and Bacon Maque Choux

Yes it's really that good. 5 stars. It's worth the extra effort of using fresh corn off the cob. I also went heavy handed with the cayenne, I like spicy! Used only a tablespoon or two of milk. Such a fresh tasting combination of flavors, wasn't sure I would like the fresh tomatoes in this, but wow they work very nicely with the other flavors. Sweet and savory.

Chicken Salad Al La Barbara

Excellent way to give chicken salad a face lift!! The combination of flavors and textures was very tasty. I used half poppy seed dressing and half mayonnaise, no milk. I also added an asian pear in place ao one of the apples. Turned out delicious. Thanks for a great recipe

Herbed Batter Rolls

These were easy to make considering it was my first experience with a yeast rising bread. In fact my eleven yr. old daughter helped me make them. The texture of the rolls were very good, almost a cross between a biscuit and a roll. I think I'll try a different combo of spices next time as the sage, nutmeg flavor wasn't my favorite. Will try with rosemary or maybe dill.

Antipasto Squares

Excellent!! Forget about appetizer, this makes a perfect meal when you add a salad with it. My kids and husband loved it. I added an extra egg and more parmesan cause I wanted more of a filling, it was perfect. I cooked it a little longer also. And most important it was so quick and easy. Thanks

Chocolate Peanut Butter Pie V

Ohhhh my goodness....really good, definitely take the advice of the earlier reviewer to add some of the melted chocolate mixture into the peanut butter, mix well then pour that layer into pie shell before pouring in the rest of the chocolate mixture, it really distinguishes the peanut butter flavor. Also, I increased the amount of peanut butter to 3/4 cup. Rich and decadent?? Yes!!! but worth the splurge.

Flavor of the sauce is very good, however I agree the chicken seems too dry and not enough sauce, in future I will double sauce and use bone-in chicken ---just remove skin

Cowboy Mashed Potatoes

What a delicious way to take boring out of mashed potatoes. These were awesome and my kids loved them too. I added more garlic, but did everything else according to the recipe. Thanks for a definite 'will make again and again' recipe.

Award Winning Peaches and Cream Pie

Pumpkin Cheese Bread II

This is a wonderfully moist and flavorful pumpkin bread. My family loved it (including the kids). I followed the recipe exactly and just had to spread the layers with a light touch and it turned out perfect. Thanks it will definitely go in my recipe file.
