Sweet Corn Tomalito

This recipe is almost too good; I want to eat it all! I followed the microwave instructions from some of the reviewers and it turned out perfectly, though it definitely some stirring up to get the texture consistent. Really, this is absolutely delicious.

Coconut Frosting and Filling

I was a little dubious about this recipe because of some of the negative reviews, but it sounded like it would taste good (and there were the equally enthusiastic reviews) so I decided to risk it. It worked quite well for me, but I think it is VERY IMPORTANT that the whipped topping is folded in carefully, not mixed in vigorously. I mixed together the sugar, sour cream and coconut, whipped it a bit with a hand mixer and then let it chill for an hour so before folding in the Cool Whip. After I frosted the cake (and I had quite a bit left over after frosting a 9 inch layer cake), I refrigerated it and half expected the icing to be falling off the cake next time I checked, but it was perfectly intact and remained so the next day as well. And it tastes delicious!

Ethiopian Cabbage Dish

As written, the recipe is okay but the spices definitely need doubling, at least. Of course, the recipe is somewhat vague as to the actual amounts of the vegetables; for example, my head of cabbage was very large, so those factors could make a big difference regarding the amount of seasoning needed. Really nice flavor, though.

Plain Cake Doughnuts

These are absolutely fantastic and super easy to make. If your oil is hot enough they come out a little crispy on the outside and fluffy on the inside. I added a little more flour plus about 1/4 tsp of freshly grated nutmeg (I love nutmeg!). They are perfect!

Ninety Minute Cinnamon Rolls

Fantastic, easy recipe. The dough turns out absolutely beautifully (though I did add a bit less fat - a combo of butter and margarine). I iced with a cream cheese icing and they were so delicious!

Spicy Garlic Salmon

This salmon was rather tasty, though next time I'd substitute cayenne for the rep pepper flakes I used (just a personal preference). I used a garlic whole grain mustard, so ours was extra garlicky. My husband called it the best salmon ever. Alongside crispy garlic fries and stir fried vegetables, it was a very nice dinner.

Tomato Soup Cake II

A really delicious, easy cake. You'd never guess it had tomato soup in it, aside from the lovely color. I added currants and walnuts, and iced it with a cream cheese frosting.

One Bowl Chocolate Cake III

Absolutely delicious chocolate cake. Moist and very chocolatey (I used 1 c. cocoa) and wonderful kept in the refrigertor. I made a cocoa whipped cream icing and it was perfect. No reason to ever buy a cake mix.

Beer Cake I

I was very pleasantly surprised by how good this cake turned out to be. I made a glaze out of beer, powdered sugar and a bit of butter and it was delicious poured over the cake. Also, this cake gets better as it sits. Yesterday I made another, this time with chocolate fudge cake mix and chocolate fudge pudding with almost as good results.

Fideo (Mexican Spaghetti)

I've made this with sausage once and pork loin and it's so delicious. It's funny just how different it tastes from regular Italian spaghetti. So good! And I love the texture of the pasta from cooking in the tomato mixture. Yum!

Quick Biscuits

It never occurred to me that heavy cream could be used as a fat but thank goodness someone else thought of it! These are the best biscuits I've ever had. Mine did not turn out particularly light but that is more than ok with me as I like a dense biscuit. These are absolutely delicious.

Chicken Tikka Masala

Definitely cut the salt way down (I used maybe a teaspoon in each part of the recipe), but do try this. It has a really nice mellow heat, but I did seed the jalapeno. The flavor is complex and deep, like Indian food should be.

Easy Beer Bread Mix

I didn't have self-rising flour so I used three cups of all-purpose and 2 teaspoons of baking powder and the bread turned out great. Instead of using the Italian flavors, I added walnuts and dried cranberries and this loaf was a hit with my husband and a male friend of ours. They were practically licking up the crumbs! I think this recipe will be very versatile for adding flavor combos. - thinking of garlic/sundried tomato/pinenut next...

Molasses Sugar Cookies

These are absolutely delicious and are the one cookie I enjoy both soft and crunchy. I didn't realize I was out of ginger so I finely chopped a few slices of crystallized ginger to substitute and I think they turned out even better that way.

Great, easy recipe with impressive results! I always vary the ingredients/flavorings when I make these cookies and they always turn out perfectly. Additionally, I drizzle them with white and milk chocolate.

Eclair Cake
