Pumpkin Bread IV

I made this in two separate batches, one with sugar and one batch with Splenda (white and brown). I made mini-loaves. Both batches turned out fine. However, the batch made with real sugar was moister than the sugar-free batch. But then again, the sugar-free batch was better as a quick "bread" in comparison to the sweeter sugar version, which was more like a dessert cake. I also added different add-ins to each little loaf. I tried dried cranberries, whole flax seed, hazelnuts, chocolate chips, and all the loaves came out great. Great recipe...so versatile.

Holiday Cranberry Chutney

I also used Splenda for this recipe. It turned out great. I used Honey Crisp apples. It was a perfect compliment to both the turkey and pork roast I served.

Yummy Sweet Potato Casserole

I baked the potatoes and used brown sugar Splenda for the diabetics in the family. I prepared it the night before then baked it one half hour before serving. It worked for me and my family. For once,I was sorry there weren't any leftovers.

Awesome Sausage, Apple and Cranberry Stuffing

I am sorry I put the liver in...I am not a liver fan. AND it seemed every bite I took had some of that liver in it! Liver lovers will like it for sure.

Roasted Brussels Sprouts

Super easy. The hardest part was cleaning the pan-next time I will use the foil!!!! and a tad less salt. BUT! Even with that extra tad of salt...We still loved them. BUT! I really love little Brussels sprouts, and I think that is the key.

Broiled Tilapia Parmesan

I did not intentionally set out to spruce up this recipe. I thought I had all of the ingredients that the recipe called for, but I barely had any of them!!! So I kept improvising...I did not have tilapia, I had whiting. I did not have lemon juice, I used apple cider vinegar. No Basil, I used dried parsley. No celery salt, I used a dash of celery seed. The only ingredients that matched the recipe were Mayo, butter(unsalted), and parmesan cheese. I followed the broiling instructions and placed the "paste" on the fish...I decided to sprinkle a scant coating of Italian bread crumbs and sesame seeds on top. The fish tased great! The bread crumbs made a light crunchy crust. Every bite I ate , I was pleasantly surprised. It seems to me, that the basic broiling instructions paired with your own paste concoction, can make a really nice fish dinner.
