Strawberry Trifle

This is ridiculously easy & it makes a beautiful appearance!! As other suggested, I made my own whipped cream to which I added a bit (1 teaspoon) of Splenda for sweetness. I also added a sprinkle of nut & honey granola to each layer for a little crunch.

Southwest Chicken

Awesome! I made this to have a healthy, (fairly)low calorie & tasty meal, and was delighted with the result! I served it over brown rice and used a bit more corn and tomatoes & a bit less black bean (not a huge bean fan, but they are great source of protein) As another reviewer suggested, I added a few sprinkles of both chilli powder and onion powder. It gave it a little extra kick & flavor. YUM. I portioned this up, and froze several servings for a later date. REALLY TERRIFIC RECIPE! Thank You Tamcatt!

Raisin Sour Cream Bars

Delish! And Easy! I found this recipe in an attempt to use up some sour cream and raisins I had on hand, and I'm not disappointed. As other reviewers suggested, I cut down to just 3/4 cup of sugar and 1 1/2 cup of flour to cut "too much" sweetness. I also added an extra sprinkle or 2 of cinnamon to both the filling and the crust. Will definitely make again! Bon Appetit!

Easy Salsa Meatloaf

I forgot to add both the parsley AND the garlic, and it was still very tasty! This was super esay to make. I served it with mashed potates with sour cream in them, another recipe I found here! I will certainly make tis again. And FYI, this meatloaf makes an awesome next-day sandwich!!

Apple Honey Bundt Cake

I am not a baker - at all - but I made this last night, and got raves. It was easy and really delicious. As suggested by others, I subsituted some splenda for sugar, and applesauce for some oil. I can't imagine it would taste any better if it had the fatty/higher calorie stuff in it. I am now eating it with my coffee for breakfast....YUM.
