Awesome! I made this to have a healthy, (fairly)low calorie & tasty meal, and was delighted with the result! I served it over brown rice and used a bit more corn and tomatoes & a bit less black bean (not a huge bean fan, but they are great source of protein) As another reviewer suggested, I added a few sprinkles of both chilli powder and onion powder. It gave it a little extra kick & flavor. YUM. I portioned this up, and froze several servings for a later date. REALLY TERRIFIC RECIPE! Thank You Tamcatt!
