Easy Seven Layer Vegetable Salad

Just like what my mom always makes!! However, she uses hard-boiled eggs instead of cauliflower. My favorite for Memorial Day weekend :)

Curried Coconut Chicken

I made this tonight for my husband- delicious!! I followed the recipe with unsweetened coconut milk and took the advice of Cook Stephanie by cooking curry paste in oil to start. I couldn't wait for the sauce to thicken, so I mixed some flour and water and added it to the pan. It thickened quickly after that. I added fresh basil at the end, and we served with naan and brown rice. We have enough chicken leftover for lunch tomorrow, and plenty of sauce to make another curry later! Fabulous recipe!!

Crunchy Caramel Corn

Yum! I made this last night for watching the Oscars- my husband and I couldn't keep our hands out of the bowl! I popped 1/2 c. popcorn kernels and the stove and omitted the peanuts, just because I didn't have any on hand. I covered the caramel bowl with plastic wrap in the microwave and it melted to the bowl, but it came right off after it cooled. I used a big Sterilite bowl to mix everything in. No sticky mess! This was great- I will definitely make it again!

Corn and Black Bean Salad

Loved this! The flavor of the cumin and chili powder is what makes it. I added a bit of onion and some tomatoes for color and additional flavor. My husband asked that I heat it on the stove, and it was even MORE delicious that way! Fabulous- making it this afternoon for our BBQ!

Taco Casserole

I made two of these- one to freeze for my dad to eat, and one for my husband and some friends. We almost didn't give the other away because it was so delicious! Everything was tasty! We added the tortilla chips on the side, and everyone seemed to like it that way. Yum!

Playgroup Granola Bars

Yum! I made these today when I realized I needed to make yet another trip to the grocery store for granola bars... They were fabulous! My husband never wants me to buy the store-bought ones again! I used a cookie sheet so the edges weren't touching the sides but they still got a bit dark. Used whole-wheat flour instead and flaxseed instead of wheat germ (what I had on hand). Also added dried cranberries and chopped almonds. Wrapped them individually in plastic wrap to stay moist. Delicious!!

Zucchini Yogurt Multigrain Muffins

Loved this! Used it for my almost 1 year-old son. I used the recipe to make two different kinds, half and half. I mixed the dry ingredients together into two separate bowls (half whole wheat flour and half baby oatmeal). Mixed the wet ingredients into one bowl and poured half into each of the dry bowls (no honey, 1/2 c brown sugar, vanilla yogurt). It worked out to about 1 1/2 cups of liquid each for me. In one mix, I added the zest and juice from one orange and a handful of chopped dried cranberries. Added a little apple juice to make the batter the right consistency. In the other mix, I added one medium zucchini, medium carrot, and small apple (all shredded) and a little apple-carrot juice. The zucchini batch took a little longer to bake. Both batches turned out DELICIOUS and my son gobbled them right up! Can't wait to make them again for him! Thanks for a great breakfast recipe!

Chocolate Mint Cookies I

My cookies came out very flat after I added the chocolate, but they are SOO delicious! My favorite of the nine treats I made this year! I will make them all the time, even if they are just for myself :)

Peppermint Patties

I used this recipe and added food coloring to make red/green ones that were half dipped in chocolate. I ended up making the patties too big and they cracked when I dipped them in chocolate. However, they were absolutely DELICIOUS! My friends who don't judge the appearance of holiday treats just loved them :) I will have to try again and make them smaller!

Pumpkin-Oatmeal Raisin Cookies

These cookies were delicious! But I had a problem with them flattening out in the oven- they didn't flatten at all. I also added a touch more salt to the remaining dough after my first batch tasted like it needed some seasoning. After that and flattening them out, they were fantastic. Moist and chewy!

Mouse's Macaroni and Cheese

This was nice and creamy, but I feel like it needed something a little extra. Can't quite put my finger on it though. I did use a whole 16 oz. of Velveeta as I couldn't find any other melty cheese. I put thin slices of tomato on top of the mac before adding bread crumbs. It was really good, but I'll have to experiment to find out what else it needs another time.

Creamy Rice Pudding

We made this tonight with rice leftover from takeout Chinese! It turned out really well! I didn't alter any ingredients and the taste is lovely. My husband said it reminds him of Christmas!

Easy Devonshire Cream

I made this just as the recipe said. It didn't taste like cream cheese to me. mI found that it becomes very close to Devonshire/clotted cream if you beat the mixture just until you think you've taken it too far. Devonshire cream is very thick, almost spreads like butter. I like how this turned out- made a double batch, one for a baby shower, and one for us at home!
