Sweet Potato Pie I

Reviewed: Oct. 11, 2011
My first time every baking or eating a sweet potato pie! Excellent! Like a pumpkin pie, this pie can overbake - make sure to turn off heat when middle is still giggly - leave the oven a crack open with a wooden spoon and let cool off nice and slowly. This is the FOOL PROOF way to avoid cracks in sweet potato, pumpkin, cheesecake, etc. Actually anything custardy!! Even leave the oven door entirely closed for the cooling - but make sure the centre is VERY giggly when doing so. THANK YOU FOR THIS AMAZING RECIPE! Didnt change anything other than upping the spices and adding 2 tablespoons of flour.

Chuck's Favorite Mac and Cheese

Reviewed: May 31, 2011
HOW is this recipe NOT number 1? Literally best recipe in the WORLD! Totally agree with the suggestion of adding just a tad of milk. I like to do my mac&cheese "German" style by adding caramelized onions. In Germany, they have their own version of Mac and Cheese and it's very common to add a layer of caramelized onions instead of breadcrumbs. It's simply amazing!! So I do both, add onions and top with breadcrumbs... yummmm!!!

Tofu and Veggies in Peanut Sauce

Reviewed: Jul. 17, 2009
Yummy! I double the sauces and added onions and thai hot sauce instead of cayenne - at first. It wasn't spicy enough for my taste so I went ahead and added the cayenne. A remarkably simple but DELICIOUS meal! Very filling too! Highly recommended!

Vegan Mac and No Cheese

Reviewed: Jul. 20, 2008
I suppose I am also a minority but I did not enjoy this recipe. I found it really bad, to be honest. I also don't understand how others could find it "creamy" well, actually yes I do but the nut taste is too much - not to mention the tons of calories nut butters give foods! No thanks. I will not make this recipe again. HOWEVER, what came out of this, on a personal level, was a desire to create a "cream" based vegan mac&cheese... so right now I am testing diff methods out using soymilk as a base, with little or no nut butters. If all goes well I will publish it! :D

Baby Back Ribs

I will never make ribs any other way ever again! I use big Al's BBQ sauce, no sauce is better! I cook my ribs in a cooking bag! I also cook the ribs at a lower temperature, 225 degrees for a bit longer than 2.5 hours -- A perfect 10 every time!

Green Bean Casserole I

Reviewed: Jan. 14, 2008
So yummy! I love how it is simple and fast -- however I must admit I deviated from the recipe - Instead of 3/4 cup of milk, I added 1/4 cup sour cream and 1/2 cup whipping cream for extra creaminess... and then instead of canned beans, which I have never been a fan of, I boiled 4 cups of frozen green beans to my desired tenderness... I also added caramelized onions along with the french fried onions....... SOOOOOOOOOOOOOOOO good!

Vegetarian Mushroom-Walnut Meatloaf

Reviewed: Dec. 30, 2007
This is definitely a great recipe! I made it almost to the letter, other than I had only Shitake mushrooms on hand. It turned out really yummy... there are a few mods I would do next time: cook the rice in broth, only add 1/2 cup of wheat germ and instead 1.5 cups of oat bran. Wheat germ is rather bitter. Also I am thinking of maybe incorporating some brown sugar into the loaf as well. I served it with the brown sugar glaze on top. Thanks so much for sharing!

Aji de Gallina

Reviewed: Dec. 28, 2007
MMMMMMMM!!! It could be my bias as I come from a Peruvian background... tastes just like my mom makes! I put extra garlice, onions and make it super spicy with extra aji! I did not add olives or carrots, they compete with the delicate balance of flavours in this dish; in my opinion.

Easy Quiche

Reviewed: Dec. 28, 2007
WOW! I was skeptical to try this recipe out at first -- but boy, was I glad I tried it! This dish is absolutely delicious and rediculously easy! I am normally a crust lover but I didn't even notice that this one had no crust. Also, the baking mix adds a richer flavour than with just egg and cheese. I used spinach instead of broccoli, and could only find plain muffin mix at the grocery store... which is sweet so I was worried it may effect the quiche... but I lightly caramelized my onions, so perhaps the sugar complimented it? Because it still turned out great. Anyway --- AWESOME RECIPE!!!

Big Al's K.C. Bar-B-Q Sauce

Reviewed: Dec. 15, 2007
WOW absolutely amazing! I didn't use any liquid smoke because I couldn't find any! And it still turned out unbelievably delicious! Made baby-back ribs with it -- I dont eat meat but I got rave reviews!!! :D I also dipped my veggie pizze into it... yumm!! By chance, I found liquid smoke at the grocery store so I am thrilled to make it again! I also love the way that you can make this recipe a guidline, and cater to your own tastes with as much or as little as you want of a spice -- also, you can control the consistency of the sauce as well. I like mine extra thick!

I have made this recipe a good four times since I found it a month ago! Unfortunately, I don`t eat meat so I havent had a chance to really taste it completed, but my boyfriend raves about it! I intend on making a meatless version... we`ll see how that goes! :)
