Fluffy Pancakes

They were great! The only thing I did was add about 2 tsp of vanilla extract. My 4 year old, who is not the best eater, said "I LOVE these!" That's a high compliment, coming from the child who has no problem telling me something "tastes howwible".

Vegetable Cornish Pasties

Mmmm..... Sadly, my turnip had seen better days when I made this, so I left it out, and added a bit more carrot and potato. I think as long as you make the sauce, the filling is flexible. Um... yeah I also didn't actually make a pasty. I wasn't feeling all that motivated, so I made the filling and ate it with bread. But I am *certain* that it would only be better in pasty form.

Meringue Mushrooms

It's going to take some practice to get the shapes right, but then again, I've never really worked with meringue, or a piping bag. I loved them, they were too sweet, borderline on burning the back of my throat. I'm going to cut back the sugar by 1/2 C next time. The second time I made them I tried mixing the cocoa powder in the meringue instead of dusting, it's definitely *not* recommended. All in all, awesome.

Cheesy Onion Focaccia

I used half whole wheat flour and shallots and hand made the loaf instead of using the bread machine and I also used my 10" cast iron pan. Came out wonderfully!

Beef Tenderloin With Roasted Shallots

Yay for shallots! I made this in the crockpot instead of the oven. Did almost everything the same, no bacon though, and didn't use a tenderloin roast, although I can't remember what cut I did use. Nothing expensive. I made the sauce, browned the meat, then put everything in the crockpot. When it was done I spooned out the sauce and made a gravy. Loved it.

Mediterranean Lentil Salad

Chickpea Curry

I was back in the US for a bit and was missing Indian food, so I made this for my mom for lunch. We both absolutely loved it! We used ground cinnamon in place of the stick and mashed up the chickpeas a bit, like another reviewer said to do.

Sweet Potato Pie I

My husband who doesn't even like sweet potatoes LOVED this pie! It was super easy to make, I even left the pie in a bit too long (oops!) and it was kind of dark on top, but it tasted great! Thanks!

Buffalo Chicken Dip

Easy Vodka Sauce

Awesome. I always freeze the sauce into serving size bags so I have it on hand for quick dinners. I've made it so many times, and everyone loves it. I do add some dried basil, I don't know, maybe a tablespoon, and maybe about the same amount of sugar. I usually just add a bit, let it sit, taste it, and add more if needed. To make an easy dinner I buy thin sliced chicken breasts, lightly coat them in olive oil, salt, pepper, and some Italian seasoning and broil it. Add some steamed broccoli and it's a complete meal. Hint: Don't use half and half, it messes up the texture. Also, don't use the cheapest vodka if you don't have to. Vodka that's a step up gives it a cleaner taste. Usually we have Absolut on hand, but I made it with some Belvedere and Grey Goose that was left at my house and it was even better.

i forgot that i loved kugel until i made it for hannukah. i think i love it even more now! only difference i made: i tripled the topping, it didn't seem to make enough the way it is written. but i love the topping, so maybe i'm just greedy ;)

Soft Oatmeal Cookies

This turned me into a Breakfast Cookie person!!! I saw the plate of cookies this morning and just *had* to have one with my coffee. I cut the white sugar down by 1/2 C, and they have the perfect amount of sweetness for me. I didn't overcook them, which is amazing for my cooking. 6 minutes seemed to be the perfect amount for them in my oven/with the size I made. It was such an easy recipe too! I've never made oatmeal cookies before. I did have to use regular oats, not the quick cooking kind, and the oats *might* be underdone, but not really noticeable. I'm going to buy quick cooking oats today though :)

Val and Jess's Vegan Avocado Dip

This was really really good! I had to make some changes, just because of what I had on hand: -Used a can of garbanzo beans -Half of a medium onion -Can of fiesta corn -Fresh lime juice I didn't measure out the chili powder, but it probably came to about 1 TBS, and just used a tiny bit of salt and no pepper. Definitely drain the salsa! I bet it's way better with black beans, if it's possible. Next time I make it I will use a third avocado though.

Harvest Pumpkin Soup

Very easy to make! I halved the recipe, I'm cooking for just myself. The pumpkin didn't even take the full 45 minutes to roast, I think it took about 30. I let it cool for a bit, and the skin came right off, in two perfect pieces. Used the Magic bullet to puree the pumpkin and broth in two batches. I let it simmer with fresh sage (didn't have dried), nutmeg and salt. Added a small bit of heavy cream at the end. I didn't really measure anything, I didn't want to make a huge mess to clean, and it came out pretty well. I will definitely make it again with my other sugar pumpkin.

Butterbeer

This isn't really a drink for everyday, but I think a big crockpot of it for a holiday party would be nice. It's different, but not so different that it's a turn-off for a gathering. Next time I'll add a bit more butter to it though, play with the proportions of everything until I get it right for me.
