Carrot Burgers

Kugel

i forgot that i loved kugel until i made it for hannukah. i think i love it even more now! only difference i made: i tripled the topping, it didn't seem to make enough the way it is written. but i love the topping, so maybe i'm just greedy ;)

Strawberries with Balsamic Vinegar

Easy Vodka Sauce

Awesome. I always freeze the sauce into serving size bags so I have it on hand for quick dinners. I've made it so many times, and everyone loves it. I do add some dried basil, I don't know, maybe a tablespoon, and maybe about the same amount of sugar. I usually just add a bit, let it sit, taste it, and add more if needed. To make an easy dinner I buy thin sliced chicken breasts, lightly coat them in olive oil, salt, pepper, and some Italian seasoning and broil it. Add some steamed broccoli and it's a complete meal. Hint: Don't use half and half, it messes up the texture. Also, don't use the cheapest vodka if you don't have to. Vodka that's a step up gives it a cleaner taste. Usually we have Absolut on hand, but I made it with some Belvedere and Grey Goose that was left at my house and it was even better.

Sweet Potato Pie I

My husband who doesn't even like sweet potatoes LOVED this pie! It was super easy to make, I even left the pie in a bit too long (oops!) and it was kind of dark on top, but it tasted great! Thanks!

Chickpea Curry

I was back in the US for a bit and was missing Indian food, so I made this for my mom for lunch. We both absolutely loved it! We used ground cinnamon in place of the stick and mashed up the chickpeas a bit, like another reviewer said to do.

Harvest Pumpkin Soup

Very easy to make! I halved the recipe, I'm cooking for just myself. The pumpkin didn't even take the full 45 minutes to roast, I think it took about 30. I let it cool for a bit, and the skin came right off, in two perfect pieces. Used the Magic bullet to puree the pumpkin and broth in two batches. I let it simmer with fresh sage (didn't have dried), nutmeg and salt. Added a small bit of heavy cream at the end. I didn't really measure anything, I didn't want to make a huge mess to clean, and it came out pretty well. I will definitely make it again with my other sugar pumpkin.

Fluffy Pancakes

They were great! The only thing I did was add about 2 tsp of vanilla extract. My 4 year old, who is not the best eater, said "I LOVE these!" That's a high compliment, coming from the child who has no problem telling me something "tastes howwible".

Quick and Easy Spinach Pie

Pretty good, and very simple. The store didn't have green onions, used small amount of chopped (small) yellow onion. Also, I used puff pastry (is there a difference?) only on the top, not bottom.

Soft Oatmeal Cookies

This turned me into a Breakfast Cookie person!!! I saw the plate of cookies this morning and just *had* to have one with my coffee. I cut the white sugar down by 1/2 C, and they have the perfect amount of sweetness for me. I didn't overcook them, which is amazing for my cooking. 6 minutes seemed to be the perfect amount for them in my oven/with the size I made. It was such an easy recipe too! I've never made oatmeal cookies before. I did have to use regular oats, not the quick cooking kind, and the oats *might* be underdone, but not really noticeable. I'm going to buy quick cooking oats today though :)

Butterbeer

This isn't really a drink for everyday, but I think a big crockpot of it for a holiday party would be nice. It's different, but not so different that it's a turn-off for a gathering. Next time I'll add a bit more butter to it though, play with the proportions of everything until I get it right for me.

Apple Toast

I didn't have to add sugar, like other people suggested, but different kinds of apples have different sugar levels. I used Gala apples. I didn't measure the cinnamon, just kind of sprinkled it on for a dusting. I'm going to try toasting the bread lightly first, then doing everything else. The bread under the apples was a bit soggy. Overall it was enjoyable, easy and fast, which is great for when you're really hungry.

Chuck's Favorite Mac and Cheese

This was pretty good. Not the best every, but I'll be making it again. It did have a bit of a tang to it. -I used farfalle pasta, I don't know if maybe it had an effect on the finished result. -Added a bit of milk right before I put the bread crumbs on. Didn't measure, just poured a small amount over the top and stirred, probably less than 1/2 C. I really do wonder if some people who made this used a 1 lb box of pasta instead of 8 oz, I didn't find it dry. The leftovers were a bit drier, but it wasn't like I needed a sip of water after each bite or anything. I *loved* the breadcrumbs on top. I thought 1 C was just fine, but I like toppings :) I used the Progresso Italian style. Very good.

Raspberry Lemon Muffins

This was a very dry recipe. I had to add 1/4 C of milk to get it to batter consistency rather than dough. I also used brown sugar instead of white to try to keep some moisture in the muffins. I added about 2 TBS extra lemon juice, as I had no extract. One whole egg instead of whites, I hate wasting things. The batter didn't make enough for 12 muffins (in a regular tin) so I made 10 instead. Had to bake for longer, 20 minutes. The end result was pretty good, my husband loved them.

Beef Tenderloin With Roasted Shallots

Yay for shallots! I made this in the crockpot instead of the oven. Did almost everything the same, no bacon though, and didn't use a tenderloin roast, although I can't remember what cut I did use. Nothing expensive. I made the sauce, browned the meat, then put everything in the crockpot. When it was done I spooned out the sauce and made a gravy. Loved it.

Mom's Zucchini Bread

This is yummy, but very very sweet. I didn't even use the full amount of sugar. Next time I'm going to try 1.5 C of sugar. I did make a few changes, I used half whole wheat flour, and substituted half of the oil for applesauce. I didn't use walnuts, I had none. I used 3 C of zucchini instead of two, which I did not drain. I did one loaf, one tray of muffins (I only have one loaf pan). It's a really good recipe, and lends itself well to substitutions. Allrecipes won't let me review this without giving it stars, I'm only rating it four because the sugar is too much, I can't imagine how sweet it would be had I used the whole amount.
