Basic Guacamole Dip

This is a really good basic recipe. I like my guacamole chunky so I usually do 1 tomato, 1-2 avocado, 1/4-1/2 an onion, minced. And I use a splash of lime juice instead of lemon, a sprinkling of salt, and a bunch of chopped cilantro. This is a great starter recipe though for someone who has never really made guacamole.

Acapulco Chicken

We really enjoyed this dish. I served it over rice. It had great flavor! As I do with most of my recipes, I added additional garlic and onion. The spice level was perfect!

Black Bean and Artichoke Burritos

This was quite interesting. I rather liked it! It has a unique flavor. I had a huge jar of artichokes from costco that I was looking to use up so this helped. I didn't want the traditional greek-style dishes for the artichokes. This totally fit the bill. We served it with a side of mexi-corn.

Creamy Spinach Tortellini

I love this recipe! I've made it a few times and it turns out famously every time! It is a little rich so I usually have a small portion with a salad on the side. This is such an addictive dish though! I have yet to try it with a reduced fat cream cheese. That might help cut down the richness. I use a lot of onion and mushroom and garlic when I prepare it. So good!

Baked Pesto Chicken

This was quite tasty and easy! I first sprinkled the chicken in salt, pepper, and garlic powder and sauteed them a bit then topped with the pesto, tomato, and cheese and baked in the oven. Served over noodles (with butter and parmesan) and a small salad on the side. I'd make it again but it wasn't phenomenal. A good weeknight meal.

Slow-Cooked Oriental Chicken

This was not good at all. It just tasted like soy sauce! Too salty! I liked the idea of it but it was lacking in the execution. We served over rice with steamed broccoli. I couldn't even finish my serving.

Cuban Black Beans II

Oh lordy this was good! I used canned beans, undrained and served over rice. My fiance loved it! It's going in my file! I added a bit more garlic, cayenne, and onion just to suit our taste better.

Beef and Vegetable Ragout

I thought this was really good! I used venison instead of beef but otherwise I followed it to a "T"! I didn't have egg noodles on hand so I served it with basmati rice over a bed of spinach. My fiance thought it was "interesting" and not in a bad way. I quite liked it and thought it was unique.

Mexican Casserole

I would give this a 5 star rating... but I made a TON of changes so can barely call it the same recipe. For starters, I used a pack (20 oz) of ground turkey, onion, garlic, and a whole packet of fajita mix sauteed in the pan together. I added probably twice the amount of (frozen) corn and salsa, added a can of green chilis, no need for any water, probably doubled the cheese and halved the tortilla chips... I eyeball everything. It was delicious and I will definetely make it again! I topped w/ light sour cream and homemade guacamole, served w/ a few chips on the side and a nice cold Corona!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This was delicious! I did make some minor changes... I used feta instead of gorgonzola b/c it's all I had. I also used regular walnuts (because that's what I had and didn't toast them or glaze them or anything). I went light on the oil (to watch calories). I mixed everything together instead of sprinkling on top. And I used a spring mix that had arugula in it and also added some kale! It was AMAZING! Even better the second day!

Pumpkin Pancakes

Very tasty! I made some adjustments to the recipe based on ingredients I had available and nutrtition! I subbed applesauce for the oil, halved the sugar (topped w/ syrup, it doesn't need the extra sweetness), wheat flour, I used almond milk b/c that's all I had and I even used a bit extra to thin out the very thick batter some. It made 10 very dense 6" pancakes. The flavor was quite good but a little dense for my liking. Will continue to tweak!

Shrimp and Okra Gumbo

This was quite tasty but I made a lot of adjustments, hence 4 stars instead of 5. I used 1lb of chicken breast and 1lb of shrimp. I sauteed the chicken in the pot first, steamed the okra (frozen, not fresh) in the microwave to cut down on the time factor, added a lot more spices, only 4 cups of water, added the thawed shrimp in and just heated it through, not even 10 minutes. Served over rice and it was quite tasty. It got a "Wow!" from my BF.

Mushroom Orzo

This was my first time cooking orzo and I enjoyed it BUT I think that there was waaaay too much butter for my liking. It made it very slimy. I could have easily halved the amount of butter. I doubled the mushrooms as well and used diced onion b/c I didn't have pearl onions on hand. It was a pretty standard recipe hence the "3 stars" but my BF seemed to enjoy it.

This was my first time cooking collard greens and I was looking for something non-traditional; and by that, I mean "southern-style." This was really tasty! Some changes I made, I didn't have quite a pound of collard greens (only 11 oz), and I used a whole onion and a lot of pre-minced garlic. I followed the rest of the spicy exactly. I felt that it was a little too gingery for my liking and if I make it again, I will half the ginger. It overpowered all the other flavors. I would probably also toss out half of the reserved water next time; I cooked for the said amount of time but it was still quite watery and I am rather impatient. It was still quite good though! I also only divided this whole dish between two people and served with a tilapia fillet. I was surprised to see that all of the ingredients were key players in detoxification so that's a plus!

Ground Beef Mexican Style

Pretty good! I made a lot of changes though, based on making it healthier and the ingredients I had on hand. 1) I used ground turkey instead, and used 1.5lbs. 2) I used 12 oz of Healthy Harvest Egg noodles. 3) I added 1 can of corn. 4) I used light sour cream. 5) I added 1/2 a pack of fajita seasoning and some extra cayenne pepper 6) I transferred everything into a 9x13, topped with organic blue tortilla crumbles (2 oz) and cheese (2% milk, 1 cup) and broiled for a couple of minutes 7) Made to serve 6 instead of 4 b/c of added noodles and meat 8) Topped with tomato and green part of green onions I think that adding black beans would be good as well but I didn't do that this time. 1 serving was 540 calories, very filling.

Delicious and easy! The only changes I made were that I used regular potatoes instead of Yukon Gold and the only squash I had was butternut so that was all I used and I used a good amount; the BF loves squash!

Feta Cheese with Basil Salad

This was delicious! I've made it twice now and it's turned out perfectly both times! The only changes that I have made is that I used an oil and vinegar dressing just because I was trying to use it up and have one less bottle of dressing in the fridge. This salad is really good, especially if you let it sit a bit before you eat it. The dinner party I took it to devoured it, and there was 4 of us though the recipe is for 6! Compliments all around! Tastes great and easy to transport and take to parties and potlucks and things!

Baked Mushrooms

I read all of the reviews about this recipe so I made some alterations to it and it turned out fantastic! I devoured it! The only reason I am giving it a 4 is because I changed so much. Here is what I did: Baby Bellas halved, onions (1 medium yellow) sliced, red and yellow bell peppers (2) chunked, 1/4 c white wine, 1 tbls minced garlic, 4 tbls melted butter, garlic powder, salt, lots of pepper, some lemon pepper seasoning, parsley, baked uncovered at 350 for 40 minutes. It looked delicious (though I wish I had put more mushrooms b/c they cooked down so much) and there was some liquid but it was good! And I drizzled it on some brown rice that I had with it. This recipe is definitely made to my liking (i love pepper and garlic!) but anyone can change it to how they like so it's a really good base. Enjoyed very much! And very low in calories! Especially if you use a light margarine instead of butter but then it wouldn't taste as good :)
