Portobello Mushroom Stroganoff

I made a few of the changes recommended - added Worcestershire and soy, reduced the sour cream, and subbed 1/2 c. broth for red wine. I also did the broth/wine in a small saucepan and reduced it down while the onions and mushrooms were caramelizing to save some time. I didn't need to use flour at all since I let it reduce down and the flavor was much more concentrated and delicious.

Addictive Sweet Potato Burritos

These were ... interesting. I think the soy sauce + chili powder + mustard kind of threw my taste buds for a loop. I halved the recipe and used a mix of black beans and kidney beans because I had an open container of black beans in the fridge already. There was way too much water and I had to boil it down quite a bit to get it to an ideal consistency. The bean/sweet potato combo is certainly an intruiging one. I think I liked it? I'm still torn. I also didn't put cheese on it, I'm lactose intolerant, but I did top it with salsa and a sour-cream alternative. I think it needed the "wetness" of the salsa. Love the concept but need to play around with this one a bit more.

Seven Layer Tortilla Pie

I really liked the concept and it was pretty easy to make. I feel like it could have used a little more oomph so I added some extra spices and used a hot salsa. Not sure if I would make it again or not. It basically tasted like a bean burrito but nicer presentation.

Miso Soup with Shiitake Mushrooms

This was just an ok soup. It was lacking... something. I'm not an expert about miso soup. It was edible, not bad, some of the crowd I made it for enjoyed it but I could tell it was basically a half-assed attempt.

Slow Cooker Latin Chicken

This was incredibly bland. I took note of some of the previous reviews and did not brown the chicken first, and I only used 7 thighs. I added extra broth and salsa and subbed a can of beans for some frozen corn. Very bland. I ended up adding more salsa on top and a dash of lime juice. Served over brown rice. I like the concept of this dish but it's lacking in execution.

Slow-Cooker Chicken Tortilla Soup

This is really great! I never have enchilada sauce on hand though so I just throw in a jar of salsa and it seems to do the trick!! I don't really follow the recipe anymore, just work with what I have on hand. And I put full chicken breasts in the crock then shred it after it's cooked!

Pomegranate Molasses Barbecue Sauce

This was delicious! The pomegranate molasses added another dimension to an otherwise traditional BBQ sauce! I added more fresh ground black pepper as a preference and used agave nectar instead of honey, and EVOO instead of sunflower oil.

Vegetarian Sloppy Joes

I've made this a number of times and love it. I'd give it 5 stars except I always have adjustments to make. I always add way more tomato sauce - usually the entire can worth. I tend to do less tempeh and more onion and bell pepper just because I like to load up on veggies where I can as well. I always double the garlic in any recipe too. Other than that, the flavors are spot on and this is a GREAT vegetarian alternative - and we're not even vegetarian! ;)
