Garbanzo Stir-Fry

I can't believe how simple and delicious this is! I used all dried seasonings, added onions instead of mushrooms and used it as a filling in some homemade tortillas. It was really good and easy. I'll be making this often.

Bread Pudding with Whiskey Sauce III

So yummy! This was my first attempt at bread pudding and I'm quite proud of myself. I used blackberry jam instead of raisins because i had none on hand and fat free half and half instead of cream. turned out great. I also concocted my own healthier sauce, but the basic recipe is really easy and delicious.

Broiled Scallops

I was really afraid to cook scallops at home, I have heard horror stories about what happens when you over cook them, but this turned out really well. Very basic and simple, but good scallops don't need much!

Baked Salmon Fillets Dijon

One of my favorite ways to prepare salmon. I do everything as is but add some crushed toasted pine nuts in with the breadcrumbs. It's really a hearty and satisfying meal.

Really Easy Bread Stuffing

I was really nervous about making stuffing from scratch...I was convinced I would somehow mess it up and ruin my first thanksgiving meal. Luckily I found this recipe and it turned out amazing! Next year I'll try adding some fun stuff for some variation but it's great as is.

Sugared Asparagus

Inside Out Ravioli II

This really couldn't be any easier or more delicious. I use mozzarella only because I usually have that on hand and vegetarian ground beef and it always gets compliments.

Stuffed Zucchini

Really great recipe, I make it once a week. I use vegetarian ground beef instead of the 1/2 beef 1/2 sausage mix and pasta sauce on top instead of the tomato mixture to avoid it from becoming too soupy. As long as you cover it in the oven, it doesn't dry out. As others stated there are no seasonings in the recipe so i suggest browning the meat with some garlic and adding some basil and oregano to the filling. I've had a lot of fun making it a little different each time I make it, but it's such a great base that it always turns out delicious.

Pasta al Mediterraneo

SOOOOO GOOD! I also use undrained tuna in oil as some other members mentioned. Other than that, I wouldn't change a thing! I was really skeptical about trying this at first but I am so glad I did, so easy and quick and it's a delicious left over the next day.
