Sugarless Banana Walnut Cake

Made this for baby's first bday. To other reviewers who claim it is not sweet enough...make sure your bananas are VERY ripe! This will sweeten it up. Also, I made a banana glaze to put on top and this added some extra yum. Like others, we used blueberries instead of nuts. A big hit in my house!

Grain and Nut Whole Wheat Pancakes

I followed previous reviewers' advice and doubled the egg, used applesauce instead of oil, and lemon juice and 2% milk in place of buttermilk. Also added cinnamon and vanilla. Much healthier and so yummy!!! Also I didn't grind down the oatmeal. Still came out fine.

Non-Alcoholic Margarita Punch

These were a super big hit! I followed the recipe exactly using a food processor to "crush" the ice....made a perfect consistency. I also used lemon-lime flavored seltzer.

Sensational Sirloin Kabobs

I only had time to marinate for 2 hours and these were still delicious! I can't imagine what 8 hours would do! I only had ginger-ale on hand and I think the combo of ginger and soy worked awesome!

Crispy Eggplant with Spicy Tomato Sauce

This will become a staple at our house. I didn't have wheat germ so I used plain bread crumbs and seasoned with basil, parsley, oregano, garlic powder, onion powder, and red pepper flakes. My husband RAVED about it and my 3 year old even ate it!

Black Magic Cake

I used dark hot chocolate instead of coffee. The taste was phenomenal. It was just dried out because I followed the advice of other reviewers who insisted it takes the entire 40 min to bake. I will only bake for 30 min next time. I topped it with a dark chocolate glaze.

Whole Wheat Sweet Potato Muffins

Amazing! I added some chopped prunes and used flax instead of eggs (1TB flax + 3TB water = 1 egg). The topping was delicious but the recipe makes wayyyy to much. I was generous with it and still have enough topping for a second batch. I saved the leftover topping in my pantry, because I will be making this recipe again! Also, I used a stoneware cupcake pan and needed to bake for 25 min. Thanks for a great recipe

Swedish Pancakes

Seasoned Rice

Fantastic! Love that I now have another use for my nutritional yeast. I had basmati rice on hand, but chose to use jasmine. I used regular margarine and cooked 2c. rice in my rice cooker (2 cups is the minimum). Followed the rest of the recipe cooking in a saucepan. The ratio of rice to all the other ingredients was perfect! Went great with the steak I made.

Spiced Yogurt Pound Cake

Amazing! I stuck to the ingredients exactly as listed. I used a bundt pan and the batter only filled it halfway. It took about 45 min to cook in the bundt. No need for glaze/frosting or even powdered sugar. It was fantastic on its own. I am excited to try this recipe in mini loaf pans to give out as holiday gifts!
