Bulgogi (Korean Barbecued Beef)

This was pretty good! Like a lot of people I didn't have time to marinade everything over night.. but I did for a couple of hours. I think this dish is something you have to let set over night so it can have its full flavor. Mine came out a little dry with a light flavor (but it was still tasty). I also think if you are grilling this, you should put the carrots on first because they take a bit longer than the meat and onions. I added pineapple and pineapple juice to tenderize it a little more and I also added a teaspoon of rice vinegar and an extra teaspoon of sugar. I didn't have any sesame oil, so I replaced it with vegetable oil. I will make this again! It was cheap to make and I had no left overs :)

This was so good and made me feel good after eating it! I left out the mushrooms and added extra cheese. This was fun and easy to make :) There were no left overs!

Beef Pho

Pho is the best! I used shrimp instead of meat, and used mung bean noodles for a change. Thin egg noodles are also really good because they don't get soggy! I didn't have the time to make the broth from scratch, so I used canned beef broth but still boiled everything else for an hour. It tasted almost as good as the Pho place I use to work at :)

Lemon Cream Pasta with Chicken

This was way better than I expected. I thought I would have left overs but my boyfriend and I ate it all up! This recipe didn't leave the pasta drenched in a heavy sauce, but gave it a light flavor. In stead of rotelle pasta, I used multicolored spiral noodles and substituted milk and butter for the heavy cream. I will definitely make this again!

Eggless Peanut Butter Cookies

These were great! I used soy milk to replace the butter milk, a little bit of vanilla and a 1/2 cup more of flour. they didn't last long once they got out of the oven. =)
