Southern Candied Sweet Potatoes

Made for Easter. Everyone loved them. I reduced the sugar a bit and added some marshmallows...not because it needed them but because the family threatened to throw me into the insane asylum when I told them I wasn't going to use them!

Dijon Grilled Pork Chops

I was so surprised at how moist (and TASTY!) these were, even though I only marinated for about an hour. I took other reviewers suggestions and: 1. Tenderized the chops first 2. Used orange juice instead of apple because that's what I had 3. Made extra to use for brushing on while cooking

Superfast Asparagus

Vietnamese Fresh Spring Rolls

Frickin' AMAZING!! And so much fun for the family to make the way each person wanted! We often order these from our local Vietnamese restaurants, and they have always looked rather complicated. Even after reading this recipe, I was skeptical about my ability to make them, but they turned out great! Water for rice paper didn't even need to be warm, but as others cautioned...they just need a dip, not a long soak. We made them with the basic items from the recipe (except the basil because we didn't have it and the lettuce because we had enough other ingredients), but we also mixed and matched some additional ingredients for fun/variety. We used leftover ground turkey (from the Asian Lettuce Wraps recipe on this site), jalepenos, bean sprouts, julienned carrots and cucumber slices. For the dip, we only used a hoisin/peanut butter/chopped cashew mix. Can't wait to make them for my next party!!

Cajun Chicken Pasta

Delicious! I will definitely be making it again. My tweaks were: Used chicken thighs; used only red & yellow peppers; used half & half plus skim milk w/some corn starch instead of cream; omitted from lemon pepper down. Served over whole wheat spaghetti.

Pizza Crust II

My first time making homemade dough. So glad I tried this, and that there was plenty left over to freeze for another time. Followed the recipe exactly, except I let it raise in a warm oven with a towel over the top instead of in the fridge. Outstanding!

Mashed Potato Hot Dish

It was delicious and so easy! I added about a tablespoon of some Indian spicy BBQ powder to the ground beef while cooking which gave it a bit of a nice kick.

Southern Yank Pulled Pork BBQ

This recipie was really easy and very tasty straight from the crockpot, but something changed (not in a good way) when I put it on a bun. I think I will try a different bun/roll/bread next time. The thing that put it back on track for me was adding Mom's Coleslaw from this site as a condiment. Mmmm...yummy!

Mom's Coleslaw

Neither my teen daughter nor I are fans of coleslaw, but my husband and father are. I made this recipie to go with Southern Yank Pulled Pork sandwiches I was serving them for dinner last night (recipe on this site). It was FANTASTIC + super easy! We all had seconds! I even added it as a topping for the pork sandwich. Oh my goodness! Sooooo good!
