Mrs Espy's Enchilada Sauce

Very good! I used chicken broth instead of water and since I didn't want to waste my can of tomato sauce, added the whole can. SO good, I will never buy canned stuff again!

Jalapeno Popper Spread

Very good, but the first time I made this, i didn't know that the white wine had to be room temperature first...we had hard rice! I think next time I might add a little Italian Sausage and make it a meal that way.

Banana Banana Bread

Made as muffins and threw in some chocolate chips. Also added a little cinnamon and vanilla extract...everyone loved them! Great as muffins since it's so much easier to eat and to serve.

Charley's Slow Cooker Mexican Style Meat

We live in San Diego and LOVE this recipe. I used Cholula hot sauce the first time and Tapatio the second time. Both were good, but I liked it better with the Cholula since it smelled less like vinegar in my house and I love this hot sauce better anyways. GREAT for potlucks!

White Chocolate Raspberry Cheesecake

I made this cheesecake as my very first cheesecake, and it turned out great! Everyone at my work loved it and my boss even requested this for her birthday! I read previous reviews and made the oreo crust with 2c oreos, 1 tbs sugar, and 1/4c melted butter. SO good!

Cinnamon-Roasted Almonds

I brought this to a potluck, and EVERYONE loved them! I decreased the almonds to 3 cups and added a bit a vanilla extract the second time around...all of the almonds were coated and sooo good!
