Mock Lobster

Reviewed: May 14, 2009
I used the exact ingredients called for. Made chicken breasts and thighs. The only thing different was I seared the meat for a few minutes before placing in the oven. (It was raining and I couldn't use the grill.) My daughter said that the breast did indeed taste like lobster dipped in butter and the meat was so tender. I ate the thighs but did not dip those in butter. The skin on the thighs tasted like a Hawaiian dish. YUM.

Chicken Fettuccini Alfredo

Reviewed: Sep. 13, 2009
I made an oppsie and didn't see it called for sour cream so I left that out. Other than adding shrimp to keep the chicken company, I made no other changes. Absolutely restaurant quality.

Quick Quiche

Reviewed: Sep. 4, 2009
Wow--what a surprise! I was just expecting something that was "Quick" and not expecting it to be as tasty as this was. I added mushrooms and green onions to a little of the bacon grease and threw that in the mix. We loved it and I am planning on making this again for just me to munch on for a few days since I am going to go back to eating low-carb Monday morning.

Awesome and Easy Creamy Corn Casserole

Reviewed: Aug. 31, 2009
I have made this twice now. Once last week as written (except I had to use a knock-off recipe for the Jiffy mix since they don't have them in my area.) Made again last night as another side to go with my husband's birthday meal, this time adding jalapenos lots of black pepper and a handful of cheese to the mixture. Fabulous stuff!

French Bread Rolls to Die For

Reviewed: Aug. 19, 2009
I hate to knead, I really do...however I wanted to try these rolls and they are very good. I put them in a muffin tin and they turned out beautifully. I had a few left over from last night, so today I scooped them out, heated them up and put in Baked Potato Soup from this site. A fabulous lunch.

Baked Potato Soup

Reviewed: Aug. 19, 2009
I thought this was great as written, but did add a tablespoon or so of potato flakes because I usually take some out and puree but I didn't feel like it, and I topped the cheese and bacon with a few sprinkles of green onion. I had left over French Bread Rolls To Die For from this site, so I scooped them out, heated them up and used them as bread bowls for the soup. Pretty yummy!

Cajun Chicken

Reviewed: Aug. 18, 2009
This made a great sandwich on ciabatta bread with garlic mayo, shredded lettuce and tomato. I too, used olive oil just out of habit.

Green Onion Ranch Dip

Reviewed: Aug. 17, 2009
This was delicious! I didn't have the suggested amount of green onions, but honestly, it didn't matter; it was flavor-packed with the amount I had on hand. I love the fact that this recipe did not call for a ton of mayo. This is a perfect dip if you are a green onion lover like me.

Pizza Dough I

Reviewed: Aug. 12, 2009
Giving it 5 stars because it saved me today. Daughter wanted homemade pizza and I didn't have a lot of time to spare. Easy, easy, easy. I did add some herbs and spices to it, but only because I wanted to. With all the toppings, you probably couldn't really tell. I'm sure there are better crusts out there, but this was what worked for me today and I will use it many times again.

Buffalo Shrimp

Reviewed: Sep. 15, 2009
This was wonderful. I didn't dip them all in the sauce because my husband had really spicy food for lunch, so my daughter and I just dipped ours in the sauce one by one. The only change I made was to use 2 1/2 Tbsp. of hot sauce--the same ratio as the butter. My husband really liked the batter on the fried shrimp and said it was very flavorful.

Onion Bread II

Reviewed: Jul. 16, 2009
Delicious! I added onion powder and dried chives because I knew I wanted a strong onion flavor. Perfect texture to this bread and it smelled absolutely amazing while cooking... it was pure torture for my daughter and I, waiting to take it out of the oven!

Scalloped Potatoes and Onions

Reviewed: Jun. 11, 2009
My husband really likes scalloped potatoes and I haven't made them in such a long time. He was so surprised when he saw them on the table and commented more than a few times how good they were and asked to have them more often. I had to use sour cream because I only had about a tablespoon of mayo, but that's the only change I made. I can't get over how creamy these were!

Deep Dish Lasagna

Reviewed: Jun. 4, 2009
This is absolutely the best lasagna I've ever had. I had to sub a coupla items because we don't have ricotta or Italian sausage where I live (China) so I subbed tofu and made my own sausage. I only had two eggs. Added some extra veggies (zucchini, mushrooms, grated carrots) but it would have been just fine without that. I would rate this higher if I could. I even had some for breakfast this morning and it was even better. I can't believe more people have not tried this recipe. After reading the reviews of other lasagna recipes, I found that most people made changes that were already included in this outstanding recipe.

Breakfast Sausage

Reviewed: May 31, 2009
I was having a problem this morning because I didn't go to the store yesterday and was out of eggs, bacon, etc... I had some ground pork and decided to make sausage and homemade biscuits and used this recipe as my guide as it's been some time since I've made sausage. It was excellent. My daughter has never cared for sausage but she ate two patties as said it was wonderful. My only addition was to add a tad of crushed fennel. I am in China and am experiencing culinary challenges due to the lack of ingredients that I am accustomed to and am finding that homemade "anything" is far superior.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: May 28, 2009
Some reviewers have mentioned that this is the same recipe as listed on Quaker's website and while indeed, the ingredients are extremely similiar, it's Beth's years of tried and true AMOUNTS of those ingredients that does the trick for me. I used crasins because that's what I had, plus some wonderful pecans I happened to have. Fabulous cookies says the daughter and hubby. Next time I may spinkle in a tad of ginger for kicks.

Fettuccine Alfredo IV

Reviewed: May 28, 2009
I was making my chicken alfredo with veggies and penne pasta and used this recipe for the sauce. I tasted it and thought it was fantastic but then decided to add about a tablespoon of cream cheese to bump it up a notch. It was delicious either way and I have no need for another alfredo recipe.

Mexican Rice III

Reviewed: May 25, 2009
I made this as a side dish for Cinco de Mayo and it was really good. I had to sub yellow and red bell pepper for the green because that's what I had in the fridge. Will make again for sure.

Pecan Pie V

Reviewed: Jul. 4, 2011
I didn't bring my recipes with me when I moved to China and was looking for a recipe as close to mine as possible and this is it. We HATE pecan pies that use any type of syrup (too sicky-sweet)and this recipe is perfect for us. I have diabetes, so used Splenda. I am from the south, and this is how the older women in my family made their pecan pies.

Garlic Cheese Chicken Rollups

Reviewed: May 13, 2009
My husband does not like chicken. He just doesn't. So when he said, "This is so good" and I said, "would you want to eat it again" and he said, "Anytime", I knew it was a winner. Instead of dipping in butter, I marinated it in homemade Italian dressing and the breading stuck great. I also made my own garlic cream cheese, sauteed mushrooms and spinach (because I needed to use them) and it was restaurant quality. Thanks for this easy, delicious recipe!
