Buffalo Chicken Dip

My daughter loved this. I had one problem, but it wasn't the recipe's fault. I don't know if the sodium content of my hot sauce was high or if it's because I am living in China and have gotten away from eating bottled stuff, but I could not eat it with a chip because it was so salty. I used bread that I had made the night before and celery and it certainly helped. But the ingredients were a perfect combination. The only change made was to use chicken breast.

Dry Ranch Style Seasoning for Dip or Dressing

I thought the idea of adding dill was excellent. If you make up a big batch of this and store in a container, you will need to use one tablespoon of the mix per cup of mayo/sour cream for your dressing or dip. I am living in China for the time being and it's difficult to find seasoning packets and buttermilk, so I love that I can make something homemade to replace the things that are available in the states.

French Onion Dip From Scratch

Delicious!!! This was so good. I did use 1 1/2 cup sour cream and 1/2 cup mayo as a personal preference. Added a clove of minced garlic at the end of the saute. There is just no reason to buy the store bought stuff--there's no comparison!

Easy Beer Bread Mix

This was truly 5 stars in my book. I used Guiness beer and I was thrilled with the taste. My husband ate some of his bread with the french onion dip from scratch from this site. (I was in a cooking mood and cooked for 3 1/2 hours straight!) I can not wait to play around with the ingredients. Please do not hesitate to try this.

Easy Mac and Cheese Muffins

This is good and is a great idea. I will doctor it up a little next time because it was a little too bland for me--I like my spices! I usually use a little mustard, a pinch of thyme, a tad of sour cream and black pepper and an additional egg and more cheese.

Red River Beef Stroganoff

Such a comfort food! Used the ingredients called for, but used different amounts for my taste. Simmered in red wime before adding the broth and only added a little broth at the time. Simmered for an hour or so ( adding a little broth every so often) and only added 2 spoonfuls of sour cream. The consistancy was perfect for me; not too runny or too thick. YUM!

Applesauce Muffin Mix

I have been meaning to rate this muffin. It is a good tasting muffin and a great base. I made them again today and added crumbled dark chocolate (just a tad) in each muffin and added pecans on top. My husband and daughter love them!

Absolutely Fabulous Greek/House Dressing

This probably rates 4.5 stars. I made this dressing yesterday, adjusting it to serve 12. Today I ate a salad with it and it was good, but may get better the longer it sits. There's just a little something missing and I can't quite put my finger on it. I think I will just adjust my ingredients a little more to my liking and add some red pepper flakes. But overall it's so much better than ANY bottled dressing out there. UPDATE: I made this again over the weekend and finally made it to my liking. I decreased the red wine vinegar by 1/3 cup and included 1/3 cup Balsamic vinegar. I also accidently added more black pepper than the recipe called for, but hey, it worked for me. I ate this on a veggie sandwich yesterday and could've eaten it straight out of the bottle.

Dutch Babies II

I had never heard of Dutch Babies before! Made this for my husband and he really loved it. I added cinnamon and powdered vanilla to the mix, and then served with syrup on the side. Do you know he ate the entire pan of this by himself? That dedinitely rates 5 stars...he's kinda picky.

Omelet in a Mug

First time I made this, I made exactly as written since I was only making it for me. Since then, I provide the eggs mixed with water in the mug, and then provide various breakfast meats, cheeses, and veggies and spices to accommodate the personal preferences of the family/guests. That way,each person gets to personalize their mug. Serve with warm tortillas on the side.

Garlic-Lemon Double Stuffed Chicken

Other than doctoring-up the cream cheese with herbs, I made this as written. Very tasty! I can't wait to play around with various stuffing ingredients. I made multi colored bow-tie pasta alfredo with lots of mushrooms, spinach and garlic and they went very well together.

Asian Mushroom Soup

Having just purchased a beautiful assortment of mushrooms, I wanted to make mushroom soup and found this recipe. I usually have to majorly doctor up recipes for taste, but this one is good. The soup is so versitle, so my changes were minor--Used shrimp instead of chicken and added hot sauce. Also used more broth. I am living in China at the moment and this is as good as I've eaten in any restaurant.

Lentil Soup

This was a great base for lentil soup. I did use chicken stock instead of water, and added a tad of cumin and one large potato cut in chunks. I also cut the other veggies into chunks as well. If you cut them too small they practically disappear by the time the lentils are finished cooking which was one and a half hours. Used balsamic vinegar because that's all I had. Served with cornbread---very hearty meal on a cold, rainy night.

Potato Chips

Found this recipe about an hour ago. Was very skeptical about chips made in the mircrowave, so decided to go make them right then and there. Oh my goodness these are soooooo good. Coated some with EVOO, then just sprayed the rest with cooking spray to save on calories. You cannot tell the difference! Sprinkled sea salt and pepper for one batch, caynenne for one batch, dill and salt for the other batch. I cut mine as thin as humanly possible and they took slightly over 3 minutes. What a delightful surprise!

Pepperoncini Beef

These made awesome mini subs for appetizers during an afternoon of watching football. Like others, I added provolone cheese, melted under the broiler and made a dressing of mayo and horseradish. YUM, yum, yum.

J.P.'s Big Daddy Biscuits

Every recipe I've tried has been a 4 or 5 stars. I followed this recipe exactly as written. My ingredients were fresh, so I know that's not the problem. They were not at all what I was expecting. I'll stay with my own recipe. UPDATE 4/19/09: Just wanted to say that I have tried these again, but instead of rolling the biscuits, I barely kneaded them while still in the bowl(maybe twice) and just broke off pieces the size of a lemon, rolled in a ball and lightly pressed them in the pie tin. They were so much better this time. Also, if you are using salted butter, definitely decrease the amount of salt in the recipe. When I made these the first time, I feel like the high humidity where I lived prevented the biscuits from rising properly.

Oatmeal Raisin Cookies VI

Made as written would rate 5 stars. With my additions due to family's personal preference rates it higher! Didn't have raisins, so used Craisins, added a handful of chopped pecans and a handful of chocolate chips. My teenaged daughter loved it because it wasn't sicky sweet like most cookies. My husband liked it because I don't enjoy baking but made these!

All Day Macaroni and Cheese

I made this because it looked easy, but being the spice lover I am, added some red pepper flakes, mustard, fresh ground pepper and parm cheese. My slow cooker is huge and has mulitple settings. Cooking it on low for 5 hours is perfect.

Slow Cooker Chicken and Dumplings

Sauteed celery and carrots with onion on stove then placed in the slow-cooker with chicken. Used chick stock instead of water. Rolled biscuit dough with rolling pin and cut into strips. Pretty yummy!
