Niki's Famous Crawfish Dip

This was awesome! I didn't add the salt but did add a few green onions. This seems too simple to be so good, but just try it and you won't be disappointed.

Mediterranean Quinoa Salad

My first time cooking quinoa and it was delicious! Used red bell pepper but used all the other ingredients but to my taste. Ate some warm at lunch then cold tonight with warm naan bread. Fabulous and filling. Will make often and add other veggies as well.

Parsley and Parmesan Crusted Pork Tenderloin

I really enjoyed this! It was so tender and moist. I usually have all of the ingredients on hand so plan to make it more often. I had two tenderloins which were a pretty nice size, so cooked it longer~probably about 40 minutes. Served with roasted brussel sprouts and corn on the cob. I wouldn't hesitate to serve this to company. It also makes fabulous sandwiches the next day!

Sweet and Sour Meatballs

Baked Ziti III

Made it in the morning and placed in fridge til time to cook. (Let sit on counter for 20 minutes before placing it in oven.) One of the jars of sauce I used had ricotta in it, so that combined with the sour cream made it nice and creamy--not at all dry. Didn't have provelone cheese (I'm in China and have to take what's available at the time) but I didn't miss it. It makes a lot of food! I served with my homemade bruschetta...

Pecan Pie V

I didn't bring my recipes with me when I moved to China and was looking for a recipe as close to mine as possible and this is it. We HATE pecan pies that use any type of syrup (too sicky-sweet)and this recipe is perfect for us. I have diabetes, so used Splenda. I am from the south, and this is how the older women in my family made their pecan pies.

Vinegar Cookies

These cookies just came out of the oven and I am eating one as I make the review. They absolutely DO taste like pecan sandies. I made mine using splenda and pecans. Mine cooked in 16 minutes. I rolled into balls and placed on cookie sheet, mashing them slightly. When they were done, they slid easily off the cookie sheet. No problems with crumbling, etc. I hate to bake, but will make these often.

Italian Dinner Rolls

These rolls were easy to make and tasted great. I did add some fresh garlic to the mix and next time may add a bit more herbs for our taste. My husband and daughter loved them. I only made 8 rolls since there are only three of us and only 1 was left over. Next time I will borrow the idea of another reviewer and make the entire recipe using 1/2 of the dough and add deli meat and cheese then bake. Brilliant idea!

Cajun Crawfish and Shrimp Etouffe

Excellent Etouffe! I always use butter when making the roux and I just added spices to taste--didn't measure but I am sure it was close. Such an authentic dish. Thanks so much for sharing!

Old Settlers' Baked Beans

We've had pretty much this same baked bean recipe in our family for YEARS. The only thing I did differently was to cook my bacon and break on top of beans before baking (cook the hamburger in some of the bacon fat) and I use only pork and beans and pinto beans and omit the white sugar. Such an outstanding recipe to serve with bbq ribs/bbq chicken or hamburgers.

Fried Artichoke Hearts

These were sooo good. I added more spices due to my family's taste (I always do) and double dipped in egg mixture and flour/panko combo (didn't have enough flour.) I served marinara sauce on the side. My family loved it.

Pasta Lasagna

I made my own sauce so it was plenty flavorful with the onions, garlic, other veggies that I always use (mushrooms, zucchini, carrots etc...) in homemade pasta sauce. I made it all in the morning, covered and placed in the fridge. Took it out of fridge to take the chill off for 20 minutes or so and baked covered for 35 minutes; removed cover and threw on some fresh mozzerella and cooked for 5 minutes or so. PERFECT! Topped with fresh basil for color. Served with an Italian style salad with Basil Vinaigrette Dressing (by Neerondogs) from this site and homemade garlic bread.

Bread Pudding II

I love recipes that allow room for creativity such as this one. I used the insides of artisan rolls (which were very large and dense), some sliced Italain bread, and for good measure half a blueberry muffin. I used an oval ceramic dish for baking and all of the ingredients were a perfect fit. Added roasted pecans in with the raisins and used splenda-brown and white. For the milk I used skimmed, and it was just PERFECT. The only complaint I have was that some of the raisins weren't pushed under the milk/bread mixture enough and they burned. MY fault...just be sure you push them way down in the mixture.

Chicken and Asparagus Bundles

Very, very good! I did spread some fresh garlic and a tad of lite cream cheese on the chicken before placing the asparagus in the chciken. My husband who usually makes a face when I tell him we are having chicken LOVED it.

Spinach Bacon Quiche

I rated this five starts because it is what it says it is, "Spinach Bacon Quiche" and it's a great recipe for that. However, I needed to use up some veggies and added another egg because I only had one egg left over (who needs ONE egg?). I only had two slices of bacon, but it didn't matter. I used puff pastry for the dough. Delicious!

Hot Artichoke and Spinach Dip II

The dip would be perfect for my family IF if I leave out the basil next time! I love basil, but just didn't like it in this particular dip. Also, hot sauce added would be very nice!

Jambalaya Casserole

Scaled down for 6 people. It made a ton of food! I used all ingredients listed except for browning sauce, but used different amounts based on what I needed to get out of fridge since I am going out of town and needed to use it all. I also had a cup of shrimp and one small chicken breast I needed to use so threw that in. I'm a bit of a spice-y type person, so used ingredients called for but added that for my taste as well. Would not hesitate to serve to company and it's super, super easy. I cooked it on top of stove in my cast iron dutch oven.
