Best of Everything Veggie Burgers

For taste I give this the highest rating; however it didn't meet the texture requirements for a burger. Rather I use these for a quesadilla filling. I finely hand chop the pepper, onion, garlic and mushrooms as this seems to work better for me. Also, I prepare them without the bread crumbs and form them into patties and freeze them. I then cook the frozen patties in a little olive oil in a pan and use it for filling with melted cheese in a tortilla. Serve with salsa and guacomole and it is delicious.

Fresh Asparagus Soup

I have been making this soup for years using the recipe as written except using 2% milk. Today I made it with broccoli instead of asparagus. I reduced the amount of parmesan and added shredded sharp cheddar and both my husband and I like it even more than the asparagus version.

Caramel Macchiato Cheesecake

I have made this a few times, always in a water bath and it has been excellent. The first time I followed the recipe exactly and found it to be less dense than I normally like so I have omitted the sour cream. I add one cup melted milk chocolate to the batter. I also use three cups oreo cookie crumbs in the crust instead of graham crackers. Lastly, I use about a third cup of brewed (Starbucks) expresso coffee. It is everyones favorite!

The Best Cheeseball

Great taste. Zesty!! Try adding one finely chopped green onion in place of half the jalapeno pepper. Crush in some garlic in place of garlic salt. If you don't have worcestershire, put in equal parts A-1 and soy sauce. Delicious!!

Hot Italian Giardiniera

This is an excellent recipe. We end up eating most of it before the second day! The first time I made it however it was definitely HOT - I have found one to two jalapenos to be plenty. It is excellent with pita chips.
