Beef Stroganoff III

This was good. Next time I will use dijon instead of prepared mustard though. And just a tiny bit. The end product was a tiny bit bland for us, so I did have tweek it a bit, but not much.

Awesome! Great for a lighter dessert. It does need fresh fruit on top, I think. After trying it several times, we all like it best with raspberry jello and fresh raspberries.

Daddy's Guacamole Dip

This was okay. I thought the consistancy was weird. Maybe a little less cottage cheese and more avacado? And it needed flavor so I added some juice from the jalepeno jar which really helped!

Summer Squash Chicken Alfredo

This was REALLY good. I can't wait to make this again. And there are no onions involved! I did add some fresh garlic to the squash as it was cooking. With the bacon, the kids really liked it - but still picked out the squash. I did not have sundried tomatoes, so I added half a can of drained petite diced tomatoes. Perfect!

Nany's Cheesy Cauliflower Casserole

This was good but the taste of the mayo was a bit overwhelming. I'm anxious to try it again with low fat sourcream instead of mayo. Also, I will add tabasco to the cheese sause. It was very good though. Would make again!

Spinach Cheese Strata

I should give this a 5 because we ate the WHOLE thing! My only problem with it is the "soggy cereal" consistency. I didn't tell anyone else that it was cereal instead of bread and they all loved it. Next time,I'll try it with a little less of the cereal, perhaps 2 cups is too much. Taste was a 5 though!

Pepperoni Bread

Awesome! I've made them several times and you almost can't mess them up. Even when the bread doesn't seal all the way, it still works! Maybe add some garlic salt to the filling?? VERY popular with company. They think you worked like a slave on them.

Spinach Stuffed Chicken Breasts

Good but needs salt and pepper! Recipe didn't call for it, and I thought the feta and the bacon would be all the saltiness it needed. Next time I will S&P the stuffing and the chicken before I wrap it in bacon. Good though.

Lemon Basil Pesto Flat Iron Steak

Awesome! A hit with everyone (I left the sauce off of the kid's steaks.) The lemon and pepper flakes are a great addition to the pesto. I had enough left over that I will serve it with pasta another day. Thank you! A keeper.

Chicken Breasts with Lime Sauce

Awesome - we have this often. Kids like it as it's "chicken nuggets with SOUR sauce." I like it because it's secretly nicer than chicken nuggets. I double the lime in the sauce and use panko. Works great for company as well. Definitely dry the coating as the recipe directs - what a great tip!

Chuck's Favorite Mac and Cheese

Great for a "lighter" mac n cheese. If you're looking for a sharp, more adult mac n cheese, I don't recommend this one. I served this for company and everyone liked it a lot - kid friendly. Good sauce to pasta ratio. I like a sharper, richer sauce but I would make this again.

Awesome! Definitely use high quality parm cheese for this(and lots of it.)Also, be sure you cube the eggplant into pretty small cubes or else it gets tough. My kids and I even put one chive on top of each serving (like the movie.) All three kids LOVED it and would never have eaten those veggies on their own.

Awesome! Must have the celery in it! I was skeptical but the end product was fabulous. I used Coleman's dry mustard. Also, any kind of nut works in this.
