Chard Lentil Soup Lebanese Style

Absolutely obsession-inducing! Don't be fooled by the simple ingredients... until you add the lemon, garlic and olive oil the soup smells like compost but then, oh wonder, it becomes the most amazing thing ever! I ate the entire recipe in two days, no joke. I crave it now. Off to buy more chard.

Exotic Brinjal (Spicy Eggplant)

The recipe is great, very authentic and easy enough to prepare... bf was not a fan so I was left with considerable leftovers...which made a great soup! I added about 1/2 cup of red cargo rice and a quart or so of chicken broth and it made a great lunch soup! Thanks for the interesting recipe!

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

I forgot to add the avocado (!) but it was still excellent! It reminded me of tabooli a bit, since I also added a 1/2 cup of fresh parsley. Thanks for a great fresh salad!

Spiced Pumpkin Seeds

I've been making this for years but this time, being on a bit of a health kick, I substituted the butter for coconut oil. Still amazing! I also add a dash of hot sauce to the mix for kick. I've found they always take longer than the recipe states, about 1h30, sometimes more. My only problem is there's never enough seeds in my pumpkins to go around!

Creamy Lemon Dressing

My new favorite dressing! I made a few changes, the most significant one being the amount of garlic: even though I usually double it in everything, I only used 1 clove after trying it with 3 and burping garlicky for 2 days. Also, I use 3/4 cup fat free yogurt to 1/4 cup olive oil to reduce fat because, trust me, this salad dressing is so delicious you will want to slather your veggies in it!!

Tangy Apple Chicken Loaf

This loaf was so good! I didn't have poultry seasoning so used just tarragon instead. I served it with salad and cranberry sauce, my man thought it was like thanksgiving in mid-april! Divine and a great low-cost everyday meal. Thanks for sharing!I bet ground turkey would also be awesome in this...

Fish Chowder

Great recipe! I wanted a lighter version so I omitted the evaporated milk entirely and added white wine and garlic broth from a batch of fresh mussels I made recently. Also added a can of baby clams with the juice and used sole fish and doubled the Old Bay. Delicious! Not so much creamy as just yummy! Thanks for the recipe!

Butterscotch Oatmeal Cookies

Pretty good cookie. I substituted the flax seed for wheat bran and cut the butter to 1/2 cup with 3 tablespoons vegetable oil and the sugar to 1/3 of a cup. Still very sweet. Mine didn't melt though and I ended up flatening them with a fork.

Slow Cooker Carnitas

This recipe was good, but not as tasty as I would have hoped. I trimmed all the fat from my roast (there's always still a lot left) and used double the spice on a 3 pound roast and it was a bit bland. I'll ad lib next time and triple the spices and add tomatillos instead of chicken bouillon, with a good deal more garlic, of course.

Super-Delicious Zuppa Toscana

Very good with some adjustments, although heartburn-inducing as written. I suggest using high quality sausage only and really squeezing out any excess fat, as well as leaving out the bacon. Seriously, it will still be hearty. I also used milk instead of cream and used the whole bunch spinach. Also double the garlic, as always.

Zucchini Yogurt Multigrain Muffins

Awesome recipe. You can substitute just about anything since there are so many ingredients. I use only whole wheat flour, cut the sugar in half, sub half the oats for bran flakes, and since I dont really buy apple sauce, I switched it for a mashed banana and a handful of frozen raspberries or strawberries quick thawed so they're mushy. Excellent breakfast muffin!

Whole-Wheat Dark Chocolate Zucchini Brownies

These brownies are amazing!!! I've made them twice, and the second time around I forgot the cocoa powder, but having substituted half the zucchini for pears, they were still awesome! My advice: the darker the chocolate the better. I also only use about a total of 3/4 cup of sugar. Serve with raspberry coulis...to die for!

Lemon Salmon Soup

I made this soup again the other, with a few adjustments, and it was amazing, again!! For all those worried about watery soup, you need much more than a pinch of each herb (think 1 teaspoon) and also about a teaspoon of sea salt. Crusted bread is a must, and adding a can of baby clams can substitute some of the salmon, or just make the soup meatier. So good!
