Best Toffee Ever - Super Easy

Yum - rave reviews by the whole family! When the mixture comes to a boil don't stir anymore! I didn't use the chocolate layer and the recipe came out great. Other than that, I used pecans instead of almonds.

Mom's Chocolate Chip Meringues

This is an interesting cookie to include in my Christmas Cookie tins. I like it because it's different and I got a lot of compliments on it. Next time I will tint the mixture for the holidays - oh, and I like the idea of using them as ghosts for halloween and just using the mini chips for eyes. I left them in the oven overnight and they really did turn out perfect.

Old Fashioned Coconut Cream Pie

I followed a few suggestions from previous reviews and I love this pie! I used 1 1/2 cups coconut milk and 1 1/2 cups half and half and instead of flour, I used 1/2 cup cornstarch and I also added 1/4 tsp coconut extract. What I really liked about this pie is that it doesn't glob all over the place when you cut it - it stays together. This is my new "go to" recipe for coconut cream pie. Thanks for sharing Carol!

Perfect Pumpkin Pie

This is a great recipe. I heated the pumpkin, spices and salt, let cool, then added the milk as someone suggested in a previous review and I also cooked the pie crust for 7 minutes before putting the "stuff" in and the pie turned out perfect!

Jefferson Davis Pie

Yummm! Fabulous dessert, very very rich. The bourbon added to the whipping cream was awesome. I cut the amount of bourbon in half and there was just a hint of flavor. I didn't want to over-power the taste of this amazing pie. BUT! The recipe says to place ingredients into 2 pie shells...it should just say 1 pie shell! I also had to add about 15 minutes the the baking time but it could have been that my oven is off. I will make this again and again. Thanks for sharing the recipe with us!

Jamie's Cranberry Spinach Salad

Very, very good. I added crumbled bacon to the salad. Next time I will cut the dressing ingredients in half if I am not planning on making another salad in a few days. The dressing and the dried cranberries are what makes this salad awesome!

Heavenly Chocolate Mousse

This is an amazing treat. I followed some advice and whipped the cream in a chilled mixing bowl and couldn't believe the difference it made in the texture. I also used a candy thermometer. I will make this again and again.

A-Maize-ing Corn Chowder

I made this as an early afternoon "snack" before the Thanksgiving feast that evening. My husband loved this corn chowder! The only thing I changed was I used 1 cup milk and 1 cup 1/2 & 1/2 instead of the 2 cups of milk. Great recipe! Thanks for sharing it with us!

Enchilada Casserole III

I used canned enchilada sauce (green), and I also made chicken instead of beef. I also added refried beans to the casserole. I read a review that suggested baking the tortillas for 5 minutes to crisp them a bit. This didn't work for me. Also, it takes about 35-40 minutes to heat this casserole up. I served this with California Style Spanish Rice and Apple Enchilada Dessert - all in all this was a great meal and I got wonderful compliments from my family.
