Absolutely The Best Shrimp Scampi

This was really good but not the best scampi ever. It is a very good recipe on its own. I just don't think it's a scampi recipe. I'm giving it four stars because I did really like it and will make it again. It's just not scampi.

Crispy Baked Chicken

Made this tonight. Used completely different seasonings, but followed the 1:1 ratio of cornmeal to flour and all other directions. This was great!! Nice and crisp on the outside, tender and juicy on the inside. Definitely a keeper.

Mexican Wedding Cakes II

I made these for the first time a few days ago. I have never liked these cookies because they were always dry. This recipe is awesome. The only change I made was pecans instead of almonds. I followed one reviewer's advice and made a conscious effort not to over work the dough. Mine were tiny, not much larger than marbles. A great size to "pop" into your mouth. Everyone loved these. Arroz Rojo (Mexican Red Rice)

This was very good and very easy. I made enough for 45 people and everyone enjoyed it. My only change - My altered servings called for many many Roma tomatoes, peeled. I drained a #10 can of diced tomatoes and it worked perfectly.

Chicken Avocado Casserole

Wonderful twist on Chicken with white sauce. Tasted great. I added a sprinkle of Pico de Gallo seasoning just before serving. Other than that, followed the directions to a Tee. Perfect!!

Top Shelf Margaritas on the Rocks

Excellent. I'm was a bit worried about the raw egg but decided to live on the edge... This recipe ROCKS!! (NO pun intended! tee-hee). Scaled it down to 4. There's just two of us tonight. No need for 16 margaritas between the two of us. LOL - Wouldn't that prove for a great evening?

Chicken Wild Rice Soup III

Very simple. I did not add rice. I just could not fathom potatoes and rice in the same dish. Since I had potatoes I wanted to use up, potatoes it was. I also did not not precook the chicken. It went in raw and actually still a hint frozen. I added the cream at the end and also the Wondra (in place of flour). Tasted fine. Not over the top, not bad. Just a nice easy meal.

Sherried Orange Walnuts

I used pecans because that's what I had on hand . I hand-squeezed the juice from 2 California Cuties (Mandarins) in place of the extract letting some pulp fall in to the nuts. I threw them in a 350degree oven for 1 minutes to crisp them up. Taste great!! I will add them to sauteed green beans.

Dijon and Avocado Rubbed Beef Tenderloin Roast

This was really good. It translated well to two individual tenderloins grilled under the broiler. I didn't taste the avocado outright, but I'm sure it affected the overall flavor. The Dijon was prominent and I liked how it tasted with the filet. I used Paula Dean Steak Seasoning. I will make this again!

Creme Brulee

I give it a two because the recipe on it's own is not good. It lacks lacks direction. Using the tips found here from other users made it great. I used baker's sugar when making the custard to make it easier on myself (breakdowns much better) and standard white sugar for the crusting. I tried brown sugar on one and did not like it at all. I recreated the recipe and added the missing steps and changes - thereby earning it a 5.

Manhattan Clam Chowder

I had a frozen bag of seafood medley from Sam's or Costco I wanted to use up. I searched and found this recipe. Pretty good. Not sure why 8 hours in a crock pot though. I put it on high and ate in 4 hours. I made a couple of minor changes. Spicy Bloody Mary Mix for the tomato juice. Hominy for potatoes. No carrots. Clam juice for water. We liked it well enough to eat two big bowls in one sitting.

Ladies Luncheon Tuna Melts

Love it!! I ate something similar to this as a young college student. It kept me healthy and well fed on many days. I did not know about cilantro back then - great addition!! Super easy to pull together. A great change up from your typical tuna salad.

Mexican Rice II

A very good basic recipe. Easy, fool-proof. My rice didn't puff either, but it did not affect the overall texture or flavor. I like a basic Mexican rice, so this was very pleasing to me. I will use this recipe again.

Lamb Chops with Balsamic Reduction

Very good recipe. I cooked as directed. I was a little fearful while the vinegar was simmering - that's all I could smell: Balsamic! But it all came together wonderfully and had a very mellow flavor when eating it. I will use this recipe again.
