Alan was this evening's host and had quite a challenge.  He wanted to make jambalaya but he as well as a few others in our group (myself included) have major "eating spices" issues.  Well, I personally think he pulled it off.  All the proper flavor was there with very little of what comes… MORE

Absolutely The Best Shrimp Scampi
This was really good but not the best scampi ever. It is a very good recipe on its own. I just don't think it's a scampi recipe. I'm giving it four stars because I did really like it and will make it again. It's just not scampi.

Mexican Wedding Cakes II
I made these for the first time a few days ago. I have never liked these cookies because they were always dry. This recipe is awesome. The only change I made was pecans instead of almonds. I followed one reviewer's advice and made a conscious effort not to over work the dough. Mine were tiny, not much larger than marbles. A great size to "pop" into your mouth. Everyone loved these. Thanks, Julie!!

Arroz Rojo (Mexican Red Rice)
This was very good and very easy. I made enough for 45 people and everyone enjoyed it. My only change - My altered servings called for many many Roma tomatoes, peeled. I drained a #10 can of diced tomatoes and it worked perfectly.
