My Dinner Club Experiences

Our first dinner meeting is tomorrow (9/24)

I'm excited and nervous.  The most important rule of the club is you have to make something you've never made before.  So, I'm trying my hand at Beef Wellingtons of all things!!

After lots of reading all over the net I'm going with this recipe (and following tips on the first review):

I do pretty well cooking most things.  But I've heard these can be tricky.  Wish me luck.  I'm full of anticipation.  8 of our 12 members will be in attendance.  Not bad for a new group.

Hopefully I'll post on Monday how wonderful every thing was and even have pics.

Hey tc - this is a good recipe. Just be sure to follow the top tip and sear your fillets before wrapping them. I made a bunch of these for a Valentines Day special when I cooked for a catering company. You can make the paste ahead of time and set it aside. I wrapped my fillet in the puff pastry and then did one of two things - - pulled the corners up to make a "purse" top - - or pulled up the sides and smoothed out the creases - then made hearts out of the excess dough to put on the top for a Valentines design. Of course with it being fall - you could cut out a leaf pattern. Hope you have fun - any excuse to cook, chat and laugh is fun to me.

I just read your "about me" profile and busted out laughing - - I've been a chef for 15 years and have just recently started my own catering business - - and I assure you I make the WORST bread in the known universe - - maybe we should compare bread recipes - - or maybe we should spare the human race and stick to what we do know how to cook well. LOL

Hi Dawn... Sounds great! Good luck - Beef Wellington is a good choice. Be sure not to overcook though (the wellingtons will continue to cook after you take them out of the oven). Cheers! Alley
